Our weekly family meal plan and this week it’s got a healthy little twist, I’m bringing in a little more Mediterranean style food in an effort to hurry in spring and warmer days!
Monday – herby crust salmon
Simple salmon fillets topped with wholemeal breadcrumbs, herbs and lemon zest baked in the oven. I’ll do some quick tomato pasta to go alongside.
Tuesday – very veggie spaghetti
Spaghetti tossed with courgettes, baby plum tomatoes, asparagus and rocket. Scatter on lots of freshly grated Parmesan cheese and some torn basil.
Wednesday – grilled chicken & roast veg
Pesto marinated chicken breasts, simply grilled. Served with roast vegetables, probably aubergine, peppers, courgettes and mushrooms.
Thursday – med veg couscous
Such an easy recipe, just roast some Mediterranean style veggies, then stir in cooked couscous a tin of chick peas and scatter with fresh herbs and tahini yogurt sauce.
Friday – prawn skewers
A delicious Spanish style recipe with grilled prawn skewers drizzled with mojo picon sauce, I’ll serve with ciabatta and maybe a large green salad. Get the prawn skewers recipe here.
Saturday – tuna pasta bake
A quick and easy cheats tuna pasta bake, really popular with the kids – grab the tuna pasta bake recipe here.
Sunday – Italian style roast chicken
I’ll be making roast chicken, stuffed with garlic and lemons so the flavours infuse the chicken meat. I’ll roast scrubbed new potatoes, tomatoes and peppers in along with the chicken. Serve with some simple watercress salad and a tahini yogurt dip.
