Weekly family meal plan
Monday – spinach & ham tart
A quick and easy tart made using a sheet of shop bought puff pastry topped with a mix of spinach and creme fraiche, snippets of ham and sliced mushrooms. I’ll make some herby diced potatoes and a side of peas.
Tuesday – pulled chicken sandwiches
A really cheap and cheerful recipe! Chicken thighs done in the slow cooker with peri peri spices, I’ll pull the chicken and then stuff into crusty rolls with guacamole and tomato salsa.
Wednesday – tuna bolognese
We love this recipe, it’s ready in under 15 minutes which makes it great for a busy weeknight. Serve alongside a portion of peas and sweetcorn (frozen veggies are just fine). Maybe add a slice of garlic bread on the side too. Get the tuna bolognese recipe here.
Thursday – loaded baked potatoes
Another slow cooker recipe – just scrub and prick the potatoes, rub the skins with olive oil and a pinch of salt, wrap the potatoes in foil and cook in the slow cooker for 8-10 hours on low. I’ll be loading them up with baked beans, cheese and bacon bits.
Friday – spicy lamb pittas
Oh these are just too good! Quick, easy and perfect for kicking off the weekend. Get the lamb pitta recipe here.
Saturday – prawn and rocket pasta
A quick spaghetti recipe, cook the spaghetti and toss with garlicky prawns, sun dried tomatoes and handfuls of chopped rocket. For the kids version I swap the rocket for peas.
Sunday – chicken roast dinner
I’m thinking herby roast chicken with all the trimmings.
