I love red pepper hummus it’s great on sandwiches and wraps or as a dip for crispy potato wedges, tortilla crisps or vegetable sticks. It’s also a great way of getting reluctant veggie eaters to eat some! Makes a great lunchbox recipe. Perfect as an after school snack or as a party dip.
Super quick red pepper hummus - perfect party dip
- 1 tin chickpeas
- 2-3 chargrilled red peppers (from a jar)
- 1 small clove of garlic - finely chopped
- 1 heaped tbs of tahini
- juice of half a lemon
- drizzle of olive oil
- pinch of salt
- Put all the ingredients into a food processor and blitz until you have a nice smooth paste.
I serve this sprinkled with a little smoked paprika.
