A dish of red pepper hummus sprinkled with smoked paprika

I love red pepper hummus it’s great on sandwiches and wraps or as a dip for crispy potato wedges, tortilla crisps or vegetable sticks. It’s also a great way of getting reluctant veggie eaters to eat some! Makes a great lunchbox recipe. Perfect as an after school snack or as a party dip.

 

Red pepper hummus

Prep Time: 10 minutes

Yield: Serves 4

Red pepper hummus

Super quick red pepper hummus - perfect party dip

Ingredients

  • 1 tin chickpeas
  • 2-3 chargrilled red peppers (from a jar)
  • 1 small clove of garlic - finely chopped
  • 1 heaped tbs of tahini
  • juice of half a lemon
  • drizzle of olive oil
  • pinch of salt

Instructions

  1. Put all the ingredients into a food processor and blitz until you have a nice smooth paste.

Notes

I serve this sprinkled with a little smoked paprika.
