Sea Bass tray bake is a delicious, healthy, one pan family recipe that’s really easy to make and is a great alternative to fish and chips!
Sea Bass has a lovely meaty texture and pairs very well with Mediterranean flavours like parsley, basil and lemons.
You can make the fish tray bake with any fish you like and even use different fillets of fish in the same recipe. This dish is so easy to prepare, totally low faff. Just slice new potatoes, thinly, scatter over baby plum tomatoes, bake, then top with the fillets of sea bass for the last few minutes of cooking. Easy!
Delicious, healthy, one pan family dinner.
- 1kg new potatoes scrubbed and thinly sliced into scallops.
- 400g baby plum tomatoes
- zest and juice of a lemon
- 4 sea bass fillets
- drizzle of olive oil
- handful of black olives
- small handful of chopped basil or flat leaf parsley
- sea salt and cracked black pepper
- Preheat the oven to 200C and lightly grease a roasting tin.
- Layer the scalloped potatoes - you can overlap them slightly but not too much or they take longer to cook.
- Scatter over the baby plum tomatoes, season with sea salt, black pepper and add a small drizzle of olive oil. Cover tightly with tin foil and bake in the oven for 20 minutes until the potatoes are becoming tender.
- Remove from the oven, lay over the sea bass fillets, add a good squeeze of lemon juice and scatter over the zest. Put back in the oven, uncovered, for around 12-15 minutes until the sea bass is lovely and flaky.
- Scatter over the black olives and chopped herbs and serve.
