Potato Salad With Bacon Ingredients

Everything you need to make our delicious bacon loaded potato salad

  • 750g baby new potatoes – scrubbed and chopped into bite-size pieces
  • 6 slices bacon (or use parma ham/prosciutto)
  • 10 cornichons – finely sliced
  • 1 heaped tbsp natural Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard

How To Make Bacon Potato Salad

Step by step instructions for making easy bacon potato salad

Step one – Boil the potatoes

  • Put the potatoes into a saucepan,cover with water and add a pinch of salt. Bring to the boil then reduce the heat to a simmer and cook for around 8 minutes (or until tender)

Step two – Grill the bacon

  • Whilst the potatoes cook, grill the bacon and then snip into strips.

Step three – Make the salad dressing

  • Mix up the dressing by adding the mayonnaise, yogurt and mustard together and stir. Season to taste with salt and black pepper.

Step four – Assemble your bacon potato salad

  • Drain the potatoes and tip into a bowl, tip in the cornichons and half the bacon and stir gently. Pour over the dressing and toss well. Scatter over the rest of the bacon.

Add some extra ingredients

  • Add in some chopped or grated hard boiled eggs
  • Add some finely chopped green onion, celery or scallions or try dill pickles.
  • Throw in some chopped fresh herbs

To make in advance, just be sure to cool the potatoes and bacon before adding the dressing. This potato salad will keep in an airtight container in the refrigerator for unto 2 days. Great as a potluck dish!
