Baked Chicken Breast In Foil Packets are super juicy, flavoursome and ridiculously easy to make! It’s a foolproof way to cook chicken breasts.

If you’re so over cooking dry, flavourless chicken then you are going to LOVE this recipe. It’s my go to way to cook chicken breasts, honestly foolproof!

The baked chicken breast comes out so juicy, tender and perfectly cooked. It’s an effortless recipe that works every time!

Plus it’s so versatile! You can serve the chicken as part of dinner with rice, potatoes or pasta and vegetables. Or use it for meal prep – shred it, slice it, dice it and use it in sandwiches, quesadillas, pasta salad – whatever you fancy.

Ingredients For Baked Chicken Breast In Foil

You’ll only need a handful of ingredients for this tasty chicken recipe!

  • 2 chicken breasts – skinless and boneless
  • 1 tsp olive oil – you can swap this for rapeseed or sunflower oil if you prefer.
  • 1 lemon sliced
  • 1 tsp dried oregano – you could use Italian seasoning if you prefer
  • 1/4 tsp dried garlic powder
  • Salt and black pepper

Equipment Needed To Make This Recipe

  • Tin foil
  • Teaspoon
  • Chopping board
  • Sharp vegetable knife
  • Roasting tin

How To Make Baked Chicken Breast In Foil

  • Preheat the oven – to 200C / 400F / Gas Mark 6
  • Prepare the tin foil parcel – take a sheet of tin foil and lay it into the bottom of a roasting tin, drizzle the olive oil on to the centre of the tin foil and lightly grease the tin foil to avoid the chicken sticking.
  • Prepare the chicken – slice the lemon and place it onto the tin foil sheet. Then lay the chicken breasts onto the lemon slices. Season the chicken with salt and pepper and then sprinkle over the garlic powder and oregano.

  • Seal the foil packet – add another sheet of tin foil on top of the chicken breasts and scrunch it together all the way around to form a sealed packet for the chicken to bake in.

  • How long to bake chicken in foil – put the chicken into the hot oven and cook for around 30-40 minutes or until the chicken is cooked through properly with the juices running clear and no pink chicken remaining.

COOKS TIP! I find it super useful to use a meat thermometer to check the cooked temperature of the chicken breasts. You’re aiming for the temperature at the centre of the chicken breast to be a minimum of 75 – seriously the meat thermometer is total peace of mind for me especially when cooking chicken.

  • Slice the chicken – once the chicken is cooked through, remove it from the tinfoil parcel and place onto a chopping board to rest for 5 minutes before slicing and serving with your favourite side dishes.

Ingredients

  • 2 Chicken Breasts - skinless and boneless
