Baked Ham And Cheese Omelette

A tasty oven baked ham and cheese omelette that’s loaded with sliced new potatoes and sweet red peppers. Just the easiest way to cook omelette to feed the whole family.

Oven baked omelettes are my ‘go to’ for an easy brunch or lunch for the whole family. I love how you can just throw everything together in the pan, bake it, then slice and eat. It’s just so simple.

And don’t forget, if you’ve got any leftovers then they taste great cold the next day with salad, ranch coleslaw or even just stuffed into a soft bread roll. 

Baked omelettes are a great recipe for using up eggs and any other leftovers that need eating before your next food shop.

Baked Ham And Cheese Omelette Ingredients

  • 1 tbs olive oil – you can swap this for sunflower or rapeseed oil if you prefer.
  • 1 red pepper – sliced
  • 1kg cooked new potatoes – peeled, boiled and sliced (you could use canned potatoes instead for speed)
  • 125g cooked ham – roughly shredded (you could use leftover shredded ham for this recipe)
  • 8 eggs 
  • 1 tsp Italian seasoning 
  • Pinch salt 
  • Pinch black pepper 
  • 50g Cheddar cheese – grated

Equipement Needed

  • Chopping board
  • Vegetable knife
  • Jug or bowl (large enough for 8 eggs)
  • Fork or whisk
  • Cheese grater
  • Saucepan
  • Shallow casserole pan or 20cm roasting tin
  • Wooden spoon
  • Tablespoon
  • Teaspoon

How To Make Ham And Cheese Baked Omelette

Cooks Tip! I cook these in a shallow casserole pan that’s hob and oven safe. If you don’t have one of these – simply pour everything into a 20cm lightly oiled roasting tin and cook it in that.

  • Preheat the oven to 190C (170C fan) / 375F / Gas Mark 5
  • Fry the peppers – add a splash of olive oil to a skillet pan and gently fry the red pepper strips for around 5 minutes to soften.
  • Whisk the eggs – Take the jug and crack in the eggs, add half the cheese, the Italian seasoning and a good pinch of salt and black pepper. Lightly whisk the egg mixture together with a fork or whisk.

  • Make the omelette – tip the shredded ham and sliced potatoes into the pan with the peppers (or if you’re using a roasting tin, tip them into that). Then pour over the egg mixture and swirl it around the ham, potatoes and peppers.
  • Scatter over the rest of the grated cheese

  • Oven bake the omelette place into the oven and bake for around 35-40 minutes or until the egg mixture is set and cooked through properly.
  • Serve – remove the baked ham and cheese omelette from the oven and leave to rest for 5 minutes, then slice into wedges and eat alongside a salad or some homemade coleslaw – it’s also great with baked beans.

Make Oven Baked Omelette Your Way

Don’t just stick to our recipe! You can add all sorts of extra ingredients into an oven baked omelette, really make it your own recipe. I kinda think it’s your dinner, put in the things you like to eat.

  • Different meats – you can add cooked bacon or diced chorizo to your oven baked omelette instead of ham.
  • Use different cheese– Italian hard cheeses like Parmesan or Pecorino or try Red Leicester or even a crumbly cheese like traditional Lancashire cheese or a tangy feta.
  • Add more veggies – try adding in sliced mushrooms or courgettes.
  • Go spicy – like a little kick of heat? Then add in some freshly chopped chillies or a pinch of chilli flakes.

What To Serve With Baked Ham Omelette

When I’m serving this as an easy lunch recipe, I usually just add a quick side salad. But when I cook it for brunch and I want it to be a bit more ‘breakfast’y’ I add some crusty bread rolls and a side of baked beans.

If you’ve any leftover omelette then let it cool and store it in an air tight container in the fridge you can eat this the next day as an easy snack idea or even make an omelette sandwich (oh they’re good!)
