Everybody loves our easy banana bread recipe! Delicious cinnamon scented, banana cake still warm from the oven is super delicious! I kinda love this with a scoop of vanilla ice cream – who’s with me? 

Don’t throw away those over-ripe speckled black bananas, turn them into delicious brilliant banana loaf – it’s totally the best way to use up old over-ripe bananas! 

Our tasty banana loaf is perfect just served with a cup of tea or glass of milk… It’s even nicer fresh from the oven with a large scoop of vanilla ice-cream melting onto it.

Banana loaf is super easy to make, the cake batter can be thrown together and in the oven in no time.

  • Weighing scales
  • Mixing bowl – if not using a stand mixer
  • Wooden spoon – if not using a stand mixer or hand mixer.
  • Teaspoon
  • Plate
  • Fork
  • Small bowl
  • Small whisk or fork
  • Spatula

Easy Banana Bread Recipe – Ingredients

You’ll only need a handful of basic baking ingredients plus some ripe bananas to make our brilliant banana loaf recipe!

  • caster sugar – this is the best sugar for making cakes
  • butter – use unsalted butter at room temperature
  • eggs – use free-range (organic if possible) large eggs
  • self raising flour – quickly sieved
  • 1 tsp baking powder (not baking soda)
  • ground cinnamon – cinnamon just works so deliciously alongside banana. It’s such a lovely, warming, aromatic spice to use in cakes and bakes. You can use vanilla extract instead and make vanilla banana loaf.
  • bananas – medium sized bananas peeled and mashed with a fork. Choose over-ripe bananas, they make the best cakes.

How To Make Brilliant Banana Loaf

It’s super easy to make our BEST banana bread recipe – just a little mixing then bake!

Step One – preheat the oven and prepare the loaf tin for baking

  • Then grease a 1lb loaf tin with butter dabbed on a little parchment paper. I don’t usually line the tin when baking banana bread as it just slides out, but if you prefer you can line the tin with greaseproof paper or baking paper.

Step Two – mix up the banana cake batter

  • Tip the butter and sugar into a large mixing bowl and beat together until soft and creamy.
  • Break the eggs in one at a time, pour and mix each one into the batter thoroughly before adding the next.
  • Sift in the dry ingredients – flour, baking powder and cinnamon and gently stir to combine.
  • Add the mashed banana and mix the cake batter altogether, folding in the mashed banana as you go.

Step Three – bake the banana bread recipe

  • Tip the cake mixture into the loaf tin and bake in the oven for around 50 minutes or until when you insert a skewer or toothpick it comes out clean.
  • Place the hot tin onto a wire rack to cool, before tipping the cake out.

Extra Ingredients To Add To Homemade Banana Loaf

Add your own flavor twists to this delicious banana cake – try experimenting and adding in any of the following

Nuts – you can stir chopped nuts into the batter or decorate the top with nuts to make a tasty banana nut bread. We like to use pecans, chopped walnuts, peanuts and even a scoop or two of peanut butter in the mix.

Chocolate – banana flavor goes perfectly with chocolate – so feel free to stir in some milk, dark or white chocolate chips to your banana cake batter.

What To Serve With Banana Bread

Well… banana bread is pretty perfect just as it is, still warm from the oven with a cup of tea works for me, but I do also love it eaten with… 

  • warm with a scoop of vanilla ice-cream and drizzle of maple syrup
  • cold with warm vanilla custard or a spoonful of thick creamy yogurt or dollop of sour cream with a drizzle of honey.
  • just sliced with a cup of tea or glass of milk

When Does Banana Bread Expire

Storage – You can keep banana loaf wrapped in aluminum foil or plastic wrap to stop it drying out and store it in an airtight container at room temperature for 2 days.

Otherwise, it’ll keep for around 4 days in the fridge – if you’ve not eaten it before then!

How To Make Moist Banana Bread

Banana Loaf - Easy Banana Cake Recipe

Ingredients

  • 175g caster sugar
  • 175g butter
  • 3 eggs 
  • 225g self raising flour
  • 1 tsp baking powder 
  • 1 tsp ground cinnamon
  • 2 bananas - peeled and mashed

Instructions

  1. Heat the oven to 170C and grease a 1lb loaf tin.
  2. Tip the butter and sugar into a large mixing bowl and beat together until soft and creamy.

  4. Sift in the flour, baking powder and cinnamon and gently stir to combine.
