The beef and bean chilli burritos are just delicious. A really easy family recipe and one the kids really love! When looking for a low fuss quick meal idea especially for a midweek meal this is always a winner.
The beef & bean chilli is quick to make taking around 30-40 minutes. Of course you don’t have to wrap this gorgeous smoky chilli up in burritos, you could just serve with some plain boiled rice and a sprinkling of cheddar cheese.
But… whilst the weather is nice this makes a great portable little snack type quick dinner for eating in the garden. I like to serve this with sweet potato wedges just to squeeze in some more vegetables. These sweet little wedges are always popular with kids and a little serving of BBQ sauce helps them along!
Getting back to the beef & bean chilli, it’s a nice smoky chilli rather than hot and spicy so it’s a great family recipe and mild enough even for young children.
Just sauté finely chopped onion and garlic in a splash of olive oil, then brown the beef mince. Stir in the tinned tomatoes, ribbons of red peppers and a tin of Mexican style beans. For the smoky flavour add heaped teaspoonfuls of smoked paprika. Bring the chilli to the boil then turn down to a low heat and simmer with the lid off for around 30 minutes.
All that’s left to do then is spoon it generously into soft flour tortillas and wrap.
If you’re serving with the sweet potato wedges – just peel and slice into chips 2-3 large sweet potatoes, toss them with olive oil and season with salt and pepper. Put these into a cold oven then turn up the heat to 200C. They’ll take around 20-30 minutes to cook depending on how fat you cut them.
A great meal to eat outdoors with an ice-cold beer or lemonade.
Family friendly chilli burritos - great midweek meal.
- 1 red onion finely chopped
- 1 clove of garlic finely chopped
- 500g minced beef
- 1 tin tomatoes
- 1 red pepper cut into thin ribbons
- 2 tsp smoked paprika
- salt & pepper
- olive oil
- 8 soft flour tortillas
- 2 handfuls of grated cheddar cheese.
- Add a splash of olive oil to a non-stick pan.
- Gently fry the onions and garlic for around 5 minutes.
- Add the minced beef and brown.
- Add the tinned tomatoes, tinned beans, pepper ribbons, smoked paprika and season with salt and pepper.
- Stir well to combine all the flavours.
- Bring the chilli to the boil then reduce the heat to low and simmer with the lid off for around 30 minutes.
To serve just spoon into the soft flour tortillas, sprinkle with cheese, wrap and eat!
The beef & bean chilli burritos are also great served with regular french fries and a big green salad and a dollop of our gorgeous homemade guacamole.
