Step One – Marinate the beef stir fry strips
- Tip the strips of beef into a bowl and pour over the hoisin sauce. Give the meat a good mix together to coat all the beef strips.
Cooks Note! You can cover the bowl with clingfilm and leave the marinating beef strips in the fridge to soak up the flavours for a couple hours or you can stir fry straight away – its up to you.
Step Two – Parboil the broccoli florets
- Cover the broccoli florets in boiling water and bring the water back to the boil. Then reduce the heat and simmer with the lid on for around 4 minutes, until the broccoli is just starting the soften a little. Then drain and set to one side.

Step Four – Stir fry the vegetables
- Add the onions and baby corn to the hot pan and stir fry briskly for 4-5 minutes until they start to soften.

Make it vegetarian
Skip the meat altogether and make this a vegetarian stir fry – you could use tofu, or chunkily sliced mushrooms as the star of the dish. You could even scatter with a handful of toasted cashew nuts to up the protein content.
Add different vegetables
Our stir fry is great made with strips of peppers, water chestnuts, carrot ribbons, beansprouts or mushroom strips. Just add in your favourite vegetables.
Change the stir fry sauce
We used Blue Dragon Hoisin Sauce for our stir fry – but feel free to use your favourite. Beef goes great with teriyaki sauce for a delicious teriyaki beef stir fry. Also delicious with black bean sauce or sweet chilli sauce.

Beef Stir Fry FAQs
Why is my stir fry beef tough?
The best beef to use for stir fry recipes is sliced steaks – like rump, sirloin or fillet – don’t use cuts of beef which are best suited to long slow cooking.
Also – don’t over crowd the pan – even if it means you have to fry in two batches. Overcrowding the pan can mean the steak simmers/steams rather than fries.
And always stir fry over a high heat – you don’t want the steak to stew!
How to velvetize beef strips?
You can create the most tender beef strips for your stir fries by following the velveting instructions here using cornflour and egg white method.
How long should I cook beef strips for?
Depending on how thick you cut the steak strips – they should be cooked thoroughly in as little as 4-5 minutes. Obviously thicker strips take longer.
How to make my stir fry spicy?
If you love your beef and rice with some spice, you can add freshly chopped chillies, ground Szechuan pepper or pinch of dried chilli flakes to your dish.
