Autumn is most definitely the season to ‘bring on the baked potatoes’.
And although there’s something just a little bit gorgeous about the simplicity of breaking open an oven baked potato and melting butter into the soft white flesh, adding just a sprinkling of salt….
Sometimes though I have to mix things up and keep baked potatoes interesting, especially if I want to keep serving them up as an easy midweek dinner!
So I make them into a totally delicious feast, load them up, pile the baked potato toppings high and tuck in…. oh go on… you know you want to!
First up, before even thinking about your baked potato toppings you need a beautiful baked potato – slowly baked in the oven.
The best baked potatoes are always done in the oven!
How to make the best baked potatoes in the oven
- Scrub the potato skins really well, you don’t want to leave any dirt on them, especially if you’re going to be eating the skins.
- Dry the potatoes really well with a clean kitchen towel.
- Wondering if you need to poke holes in potatoes before baking? Then yes! Prick the skins plenty of times with a fork (so they don’t explode during cooking).
- Pop them in the microwave on high. Two potatoes for five minutes turning them over half way. Or four potatoes for eight minutes, turning them over half way.
- Brush the skins with olive oil – just ever so lightly using a pastry brush. You can add a sprinkling of salt here and rub it into the oil if you like.
- Pop them straight into a preheated oven and bake on 180C for around 45 minutes to an hour. They are done when they look golden brown and when you give them a squeeze they are soft and easy to squash in with your fingers.
- Remove them from the oven – split them open and load on your toppings.

For an easy lunch or simple midweek dinner you just can’t beat a baked potato 80s style, loaded with baked beans and grated Cheddar cheese. Perfect with a glass of Vimto. This for me is a traditional baked potato topping.
If I’m making this for dinner I usually add a side of homemade coleslaw too and sometime I use the baked beans with little sausages in, just because it tastes so good!
Spicy Vegetable Chilli Topped Baked Potato

For a healthy baked potato topping try heaping on spoonfuls of our delicious vegetarian chilli (ad feature recipe) then add a dollop of sour cream on top and a scattering of grated Cheddar cheese and a sprinkling of chopped chives or coriander.

Cheddar & Caramelised Onion Baked Potato Topping
Make your own caramelised onions by frying up a sliced red onion, add a large spoonful of fruity chutney and a tsp of brown sugar to the pan and stir through the onions and sizzle until they start to turn sticky and gorgeous.
Load this lovely sticky onion mixture into the potato and top with grated mature cheddar.
This makes a lovely lunch – vegetarian baked potato toppings go really well alongside a green salad.

You can make cinnamon apple slices really easily just sauté apple slices in butter with a tiny drizzle of maple syrup and teaspoon of cinnamon. Then load them into the baked sweet potato.
Next add a spoonful of clotted cream, Greek yogurt or good vanilla ice-cream works really well here and sprinkle with pecan nuts. You won’t regret it!
