Step Three – fry the chicken parm

  • Warm the olive oil in a frying pan over a medium heat.
  • Then fry the breaded chicken for around 6-7 minutes on one side, then flip over and continue to fry on the other side until cooked through properly and golden brown.

Cooks note – you may need to fry the chicken cutlets in batches. Once fried, just lay onto a paper towel-lined plate to blot off any excess oil before making up the sandwiches.

Recipe Tips And Ingredient Swaps And Add-Ins

Use Different Seasoning

You can flavor-up the breaded coating anyway you like. Fancy a spicy crumb, add a good pinch of chilli powder or red pepper flakes to the breadcrumb mix. Want some smoky vibes? Add in a tablespoon of smoked paprika.

Can I Make Chicken Parm Sandwiches In Advance?

We don’t recommend making chicken parm sandwiches in advance, they go soggy once cooked and so don’t keep too well. If you’re looking to save time, prep the ingredients ahead-of-time, so you’re ready to get straight on with the cooking when dinner time comes around.

Make Your Own Marinara Sauce

You can absolutely make your own marinara sauce instead of using shop-bought.

Grab a saucepan, add a drizzle of olive oil, gently fry a finely chopped onion and 2-3 cloves of garlic. Then tip in a couple of cans of tomato paste (passata) and 2 tsp dried oregano and a handful of chopped fresh basil leaves, season well with sea salt and cracked black pepper and simmer for around 20-30 minutes to really infuse all the flavors.

What To Serve With Chicken Parm Sandwiches

When I serve up these warm, deliciously melty breaded chicken sandwiches, I tend to go light on the sides.

  • Coleslaw – try one made with a healthy lemon and olive oil dressing rather than the traditional creamy mayo sauce.
  • Sweet potato fries or carrot fries, these are a lighter alternative to French fries, especially if you air fryer them.
  • Tomato and cucumber salad – a light, fresh salad that goes great alongside sandwiches.
  • Mediterranean roasted vegetables – a medley of seasoned and roasted zucchini (courgette), aubergine, bell peppers, red onions and fennel are great alongside a chicken parm.
  • Rocket salad – fresh, peppery and zingy. Plus it only takes minutes to make.

How To Store Leftover Chicken Parm Sandwiches

If you have leftover chicken parm sandwiches, once they’re fully cool, wrap them in greaseproof paper and store in an airtight container in the fridge. They’ll keep for up to 1 day. But they do go quite soggy, so it’s best with this recipe to just make the quantity you need.
