Now, I know, you can buy little tubs of guacamole in the supermarket and I do often buy supermarket dips just to add to a meal. But when it comes to guacamole, homemade fresh guacamole is just a whole different thing to the tubs of green sludge in the chiller cabinet! 

My chunky guacamole recipe takes just a few minutes to make and tastes so good! Loaded with fresh avocado, finely diced red onions, juicy vine tomato, punchy red chillies, zesty lime juice and fresh coriander (or fresh cilantro for my US readers) 

This is one of our favourite Mexican appetizers – great with cheesy nachos!

Homemade Chunky Guacamole Recipe 

Serves – 4 people as a dip  

Prep Time – 10 minutes 

Total Time – around 10 minutes

Equipment Needed

  • Chopping board 
  • Medium Bowl 
  • Fork 
  • Sharp vegetable knife 
  • Tablespoon 
  • Juicer 
  • Airtight container if you’re making ahead 

Chunky Guacamole Ingredients 

To make our easy Mexican inspired dip you’ll just need a handful of flavourful fresh ingredients which come together to taste amazing!

  • 2 large avocado – we use the ‘ripe and ready’ avocado from the supermarket
  • 1 large vine tomato – you can swap this for a handful of baby plum or Roma tomatoes 
  • 1 small red onion – or half a large one – you can swap this for white onion or spring onions if you prefer
  • 1 red chilli – or you can use Jalapeno peppers if you prefer 
  • handful of fresh coriander 
  • 1 lime 
  • pinch of salt – which you can adjust to suit your own tastes.

How To Make Chunky Guacamole

You’ll love how easy our delicious guac is to make and eat! These simple prep instructions will have you dipping your nachos in no time! 

Step 1 – prepare the avocado 

  • Slice the avocado using a sharp knife all the way around lengthways – then twist to split it into two halves. 
  • Then slide a spoon under the stone to flip it out of the avoacado flesh. 
  • Next use the spoon to slide just inside the skin so that you can scoop out the avocado flesh.

Step 2 – prepare the rest of the ingredients 

  • Finely chop the red onion.
  • Deseed and chop the vine tomato.
  • Finely chop the red chilli – you can leave the seeds in our out, depending on hot and spicy you want your dip to be.
  • Chop the coriander 

Step 3 – make the chunky guacamole 

  • Put the avocado into a bowl and mash it using the back of a fork – you don’t want to make it too pureed, keep a bit of texture and chunkiness in there. If you find using a fork too difficult (because if avocado are a tad firm, they can be a little slippy to mash, you may find it easier to use a potato masher)

  • Add in the onions, tomatoes, chilli and coriander and give the whole lot a mix together.

  • Then squeeze in the lime juice – just use your own judgement and taste here – add it a little at a time, stir, and taste to see if it’s zesty enough, if not add a little more.

  • Then season with salt – again, add a little, taste, and adjust if you need too. 

Step 4 – serve your chunky guacamole 

  • Tip your homemade guacamole into a bowl and serve with your favourite things to dip!

Which avocados are best for guacamole?

We use Hass avocados when we’re making guacamole, they’ve got a delicious creamy texture that’s perfect for making dip. 

How do you soften hard avocados 

The quickest way to soften avocado is to pop them in a paper bag with some ripe bananas.

Ripe bananas release ethylene and that helps other fruit to ripen more quickly, and if you’ve got them all closed up together in a paper bag, well it’ll happen even more quickly. 

How do you stop guacamole turning brown

Well it’s best to eat guacamole fresh, but if you’re storing it for later – then add a thin layer of water or lemon juice and cover the bowl in cling film and store it in the fridge. Carefully pour the water off before using.  

How to jazz up guacamole 

Guacamole is a zesty little dip already, that’s packed with flavour. But there’s always room for a little added extra flavor right?

You could add tasty garnish or toppings to you chunky guacamole – try caramelised jalapeño pepper or fresh coriander, a drizzle of chilli oil or even some toasted seeds. I like to add a sprinkle of black sesame seeds. They kinda look punchy against the green!
