- Large saucepan with a lid
- Colander
- Baking sheet
- Glass or small bowl (for smashing the potatoes)

Smashed Potato Salad Ingredients
Everything you need to make this EPIC crispy potato salad recipe
For The Roasted Smashed Potatoes
- 2lb baby new potatoes (around 1kg)
- 2 tablespoon olive oil
- 2oz butter (around 60g)
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- ½ teaspoon dried dill
- Pinch salt (and black pepper if you like)
For the creamy potato salad dressing
- 2 tablespoon half fat creme fraiche
- 2 tablespoon mayonnaise
- 1 bunch scallions - finely chopped (spring onions)
- 8 hamburger pickles - chopped (bread and butter pickles)
- Pinch salt
- 1 teaspoon Dijon mustard (optional)
- Spring of fresh dill - to serve
How To Make The BEST Crispy Smashed Potato Salad
Step by step instructions for making the most delicious roasted potato salad ever!

Step One - boil the baby potatoes
- Scrub the potato skins, then halve the potatoes and then place in a saucepan, cover with cold water, add a pinch of salt and bring to the boil on the hob.
- Once boiling, reduce the heat to a simmer and cook for around 7 minutes or until fork tender. Drain the potatoes using a colander.
Step Two - preheat the oven
- Preheat the oven to 400F / 200C
Step Three - smash the potatoes ready for roasting
- Tip the drained potatoes onto a baking sheet, greased with olive oil.
- Squash each potato down using a cup or bowl, or bash with a rolling pin.
- Add a little dab of butter to the top of each smashed potato and drizzle over more olive oil.
- Sprinkle over the garlic powder, dried dill, dried parsley and a good pinch of salt.
Step Four - roast the smashed potatoes ready for the crispy potato salad
- Roast in the oven on 400F / 200C for around 30 - 40 minutes until crispy and golden. You can turn the potatoes around half way through if you like.
- Leave the crispy smashed potatoes to cool for around 30 minutes.
Step Five - mix up the smashed potato salad dressing
- Mix up the creamy dressing. Add the creme fraiche, mayonnaise, scallions and hamburger pickles to a bowl - mix well to combine.
- Then stir in the cooled crispy roasted smashed potatoes.
- Sprinkle with freshly chopped dill. And serve.
