Step by step instructions for making sweet chilli potato wedges below

  1. Preheat the oven to 400F / 200C
  2. Prepare the sweet chilli potato wedges – Peel the potatoes and slice them into chunky wedges. Put them into a large bowl. Then pour in the sesame oil, and throw in a pinch of salt, teaspoon of garlic powder, teaspoon of onion powder, and the three teaspoons of five spice powder. Give the potatoes a good mix together.
  3. Bake the spicy potato wedges – tip the seasoned potato wedges onto a large baking sheet in a single layer and bake for around 40 minutes (or until cooked) give the tray a shake around half way to help the wedges cook evenly.
  4. Make the sweet chilli topping – add a splash of sesame oil to a frying pan, toss in the chopped onion, peppers and chilli. Add the garlic powder and five spice seasoning. Fry for around 5 minutes on a low heat. The pour in the soy sauce and sweet chilli sauce. Continue to cook for a further 10 minutes until all the vegetables are soft.
  5. Assemble the sweet chilli potato wedges – take the crispy baked potato wedges out of the oven, pour over the sweet chilli topping, scatter over the chopped scallions, sprinkle over the sesame seeds and cilantro. Enjoy!

INGREDIENT SWAPS AND ADD-INS

Swap the potatoes – you can make these sweet chilli potato wedges with sweet potatoes if you prefer. When I use sweet potatoes, I don’t peel them, I scrub the skins really well, dry and then slice into wedges. Also, they’ll take less time to roast, so keep an eye on them in the oven.

Go with a different sauce – try the wedges using teriyaki or hoisin sauce for a twist on the flavours.

Oil – you can swap the sesame for olive oil or sunflower oil if you prefer, although you will miss out on the flavour you get from sesame oil.

Make a French Fries version – you could swap the wedges for your favourite French fries or chips.

⭐ Waxy potatoes work best for wedges, they stay firmer and make the best crispy potato wedges.

⭐ Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated in the oven or air fryer – I reheat them using foil trays in the air fryer on reheat for around 10 minutes (or until hot throughout)

⭐ If you want to prep ahead, you can leave these unbaked in the fridge on a tray wrapped in foil for up to a day.

⭐ If you are only making a small batch say for two people, then air fry the potato wedges instead.
