Broccoli and marmite soup… oh YES!

Adding marmite to soup creates a delicious depth of flavour and works oh so well with our easy broccoli soup recipe. And well… Marmite – you’re either going to love it or hate it, right?!

I admit, it’s a bit of a weird combination BUT.. Broccoli and Marmite Soup just works oh so well.

It’s completely delicious and just perfect for autumn and winter lunch with a little pile of grilled cheese sandwiches to dip in.

Our easy broccoli soup recipe is super popular with the kids. I think they see it as some sort of murky green witches potion, and potions obviously contain magic and magic is brilliant and so eating magic is amazing and so it all gets eaten!

I know this won’t last, but whilst it does – I’m happy they’re eating healthy soup and enjoying it!

Broccoli & marmite soup is a taste sensation and there is nothing more perfect to dip into it than toasted cheese sandwiches.

Using marmite in soup adds a lovely depth of flavour and really meaty vibe but without the meat, obviously.

This is a good soup recipe for packing into thermos flasks or food pots and sending for packed lunches.

I always think soup tastes nicer from a mug… one day I will own the beautiful retro enamel mugs I’m searching for. Until then…

Broccoli and Marmite Soup Ingredients

  • 1 tbs olive oil – or use rapeseed oil or a knob of butter if you prefer.
  • 2 cloves of garlic – finely chopped, if you can find smoked garlic it’s worth buying and using in soup it adds a lovely smoky flavour.
  • 1 onion – finely chopped
  • 2 sticks of celery – finely sliced
  • 1 head of broccoli – chopped into bitesize pieces, use the whole thing stalks too – don’t waste any.
  • 2 small potatoes – peeled and diced.
  • 1 heaped tsp of marmite
  • 500ml of vegetable stock
  • black pepper – to taste

How to make easy broccoli soup

  • Add the olive oil to a saucepan and gently fry the onions and celery for a few minutes to soften them.
  • Add the garlic and briskly stir for a minute.
  • Add the broccoli and potatoes and a grind of black pepper
  • Stir through the marmite then pour over the vegetable stock.
  • Bring the soup to the boil, then reduce the heat and simmer with the lid on for around 20 minutes.
  • Once cooked blend the soup until smooth.

Healthy broccoli soup recipe flavoured with marmite.

Ingredients

  • 1 tbs olive oil
