  • Six slices of baguette or ciabatta (or use baguette slices or other crusty bread)
  • 1 clove garlic - peeled
  • 100g soft goats cheese
  • 100g cooked baby beetroot
  • Handful of rocket
  • Handful of rosemary sprigs
  • 1 tablespoon olive oil
  • Salt and black pepper to season

Step One - toast the bread

  • Slice your ciabatta and toast it lightly in the toaster.
  • Firstly as soon as the toast comes out of the toaster, rub the garlic cloves over the surface, this just adds a nice garlicky warmth.
