Burrata Salad Recipe: Delicious Easy Summer Salad Recipe

Get ready for summer with this delicious and easy Burrata Salad recipe! Made with fresh ingredients and bursting with flavor.

When it comes to summertime I'm ALL about the gorgeous Italian style salads. They make me feel, happy and healthier, and who doesn't want to feel good?! My burrata salad is one of my absolute favourites. It's super simple to make, and it looks and tastes amazing!

WHY YOU'LL LOVE THIS EASY BURRATA SALAD RECIPE

⭐️ You can make this amazing burrata salad in less than 15 minutes! So it's one of those super simple, quick summer dishes.

⭐️ It's bursting with juicy tomatoes and Mediterranean style sunshine veggies. And that creamy burrata cheese is just so delish!

⭐️ Burrata salad just looks effortlessly amazing! Like you went to a whole lot of effort (when really it's next to none)

  • Burrata - if you've not tried Burrata and you're wondering what it is... it's a super tasty, creamy Italian cow milk cheese. It has a skin (a bit like fresh mozzarella) but once you break into it, it's filled with the most delicious soft cheese, almost like a ball of cream cheese, but with a little tang. SO GOOD!
  • Basil Pesto - you can use shop bought, or if time make your own pesto.
  • Cucumber - sliced
  • Baby Plum Tomatoes - you can swap this for cherry tomatoes or heirloom tomatoes if you can get them.
  • Red Onion - finely chopped
  • Extra Virgin Olive Oil
  • Red Wine Vinegar
  • Dried Oregano
  • Dried Garlic
  • Marinated Olives
  • Italian Salami - I like my burrata salad with added salami, but you can swap this or skip it if you like
  • Marinated Artichokes - grab a jar next time you're in the supermarket, they're great for adding a bit of taste and interest to salads, or for topping bruschetta.

HOW TO MAKE BURRATA SALAD

Prep Time – 15 minutes

  1. Mix up a little side salad - add the cucumber slices, baby plum tomatoes and red onion to a bowl
  2. Make the salad dressing - In a separate cup whisk the olive oil with the vinegar, dried oregano and a pinch of garlic powder - season with salt and black pepper then pour onto the tomato cucumber salad and toss well.

  1. Make up the burrata salad bowls - tip half the tomato cucumber salad into each bowl. Then arrange the olives, artichokes and salami in the bowl. Add the burrata cheese balls and top with the green basil pesto.
  2. Serve - I like to eat this with olive bread - sometimes fresh, sometimes toasted and rubbed with a clove of fresh garlic and drizzle of olive oil.

INGREDIENT SWAPS AND ADD INS

Swap The Salami - you can swap the salami for parma ham, chorizo, or mortadella.

Add More Vegetables - you can add any salad vegetables or grilled vegetables you like to eat to this lush burrata salad bowl. Try roasted Mediterranean vegetables, or grilled eggplant or zucchini. You can add in salad leaves like arugula, baby lettuce or spinach.

Swap The Burrata - you can make this tasty Italian salad with any cheese you like to eat - try swapping the burrata for mozzarella cheese if you prefer.

Salad Dressing - I use a homemade red wine vinegar and olive oil dressing. But you can swap this for a balsamic vinaigrette, lemon, fresh basil and olive oil or other salad dressing you like.

Salad Sprinkles - I am a fan of salad sprinkles! Little bits and pieces you can sprinkle on a salad to add that little 'extra'. For Italian salads choose toasted pine nuts or little garlic bruschetta bites.

Our delicious Italian burrata salad goes great with any bread - try focaccia, pita bread or chunky breadsticks. Or sometimes I really feel like French fries so I make them in the air fryer and sprinkle with Italian seasoning... and garlic mayo it's the perfect side dish!

⭐ Buy the best quality ingredients you can for this salad, they make the difference.

⭐ If I'm packing this for picnics or making ahead then I add the pesto just before serving.

⭐ You can make this ahead of time and keep in the refrigerator for up to 2 days - although it's best to add the dressings just before you serve to avoid anything going soggy.

Burrata salad leftovers can be kept in an airtight container in the fridge for up to 2 days.

Ingredients

  • 2 x 5oz balls of burrata (150g balls)
  • 2 tablespoon basil pesto
  • ½ cucumber - sliced
  • 12 baby plum tomatoes - sliced
  • ¼ red onion - finely chopped
  • 1 tablespoon olive oil
  • 2 teaspoon red wine vinegar
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried garlic
  • 1 cup marinated olives
  • 12 slices Italian salami
  • ½ cup marinated artichokes

Instructions

  1. Add the chopped tomatoes, cucumber and red onion to a small bowl. In a separate cup whisk the olive oil with the vinegar, dried oregano and garlic powder - season with salt and black pepper then pour onto the tomato cucumber salad and toss well.
  2. Grab your serving bowls - tip half the tomato cucumber salad into each bowl. Then arrange the olives, artichokes and salami in the bowl. Add the burrata balls and top with the green basil pesto.
  3. Serve straight away - with your favourite breads.

Notes

Make Ahead - when I make this ahead I don't add the dressing or pesto until just before I serve, this stops the salad going soggy.

Love Your Leftovers - leftovers can be stored in an airtight container in the fridge for up to 2-days.

Goes Great With - sweet potato cubes, air fryer French fries, or shop bought Italian breads.
