How To Prepare Leeks
Okay, so the one thing you have to remember with leeks is that they need a really good clean before you cook them.
The soil gets trapped between the tightly wrapped leaves and you need to be sure to rinse them well to remove it all.
- Remove the outer leaves and then trim the top and bottom off the leek so you're just left with the middle part.
- Then slice the leek in half lengthways and holding the leek upside down, run it under cold running water to try to remove as much soil and dirt as possible.
- Next chop the leek into slices and soak in cold, salted water for around an hour.
- Then tip all the chopped leeks into a colander and run under cold running water to remove the last particles of soil.
