You’ll just LOVE this flavour packed Cajun chicken and rice recipe. You can have our spicy chicken rice recipe on the table ready to eat in less than 30 minutes. Just add some tasty side dishes for an easy weeknight dinner.

One thing is for sure Cajun chicken is always really popular with the kids. They’ll pretty much eat it any way it’s served!

And now my Cajun chicken and rice is a total winner. A quick and simple chicken recipe that’s brilliant for weeknight dinner.

Ingredients for Cajun Chicken And Rice

For the Cajun Chicken Seasoning

  • 2 tsp smoked paprika
  • 1 tsp onion powder 
  • 1 tsp dried oregano 
  • 1/2 tsp dried thyme 
  • 1/2 tsp garlic powder 
  • 1/4 tsp cayenne pepper (if you like more of a kick of heat add a little more)
  • 1/4 tsp cracked black pepper

Cooks Tip! If you prefer you can use 2-3 tsp of shop bought Cajun seasoning if you don’t want to make your own.

For the Chicken and Rice

  • 1 tbs olive oil – you can swap this for sunflower or rapeseed oil if you prefer
  • 1 onion – diced
  • 1 red pepper – diced
  • 650g chicken breast – diced into small bitesized pieces – you could use chicken mini fillets for this recipe if you prefer.
  • 600g Tomato passata – choose one that’s flavoured with garlic and herbs
  • 1 1/2 cups of rice
  • Salt – season to your own taste

Equipment Needed

  • Chopping board
  • Sharp vegetable knife
  • Teaspoon
  • Large saucepan
  • Medium saucepan
  • Wooden spoon
  • Serving dish

How To Make Cajun Chicken And Rice

  • Fry the onions – add the olive oil to the large saucepan over a medium heat. Tip in the diced onions and gently fry for 5 minutes to soften.
  • Seal the chicken – add the chicken pieces and fry over a medium high heat until the chicken turns a white colour.
  • Add the peppers and tomatoes – tip the diced peppers and tomatoes into the pan with the chicken and stir.
  • Add the Cajun seasoning – tip in the Cajun seasoning mix and stir well. Add a pinch of salt to season.
  • Bring the Cajun chicken sauce to the boil – then reduce the heat and simmer with the lid on over a low heat for around 20 minutes (or until the chicken is cooked through properly)
  • Cook the rice – when the Cajun chicken sauce has around 15 minutes left to cook start the rice. Cook this according to the packet instructions. Once it’s cooked drain using a colander.
  • Mix the Cajun Chicken And Rice – tip the rice into the chicken sauce and mix everything together gently to coat all the rice in the delicious flavoursome sauce.
  • Serve – tip into a serving bowl, add your favourite side dishes and let everyone help themselves.

Cooks Tip! Cooking the rice separately from the chicken sauce is a good idea because it means you can freeze the sauce without the rice.

Cooks Tip! You could serve the Cajun chicken sauce without the rice and serve it up with creamy mashed potatoes, couscous, fries or polenta.

Ingredients
