Quick and easy dinner just got REALLY TASTY! Our Cajun prawns flatbread is so easy to make, freshly toasted flatbread, topped with a zingy zesty salad and warm spicy Cajun prawns.
This is one of my favourite quick and easy prawn recipes. It takes just a few minutes to prepare and cook and it’s great for when you’re cooking dinner for two.
I usually use shop bought flatbreads for this recipe but if you wanted to make your own then I recommend the River Cottage flatbread recipe, it’s really good and super easy to make.
Cajun Prawns Loaded Flatbread Ingredients
- 1 little gem lettuce – shredded
- 1/2 cucumber – sliced
- 150g baby plum tomatoes – halved
- 1/4 small red cabbage – shredded
- 1 lemon – zest and juice
- pinch sea salt
- 2 flatbreads
- 1/2 tbs olive oil
- 250g raw king prawns
- 2tsp Cajun seasoning
- handful of coriander – roughly chopped
If you don’t want to bother with preparing salad, just buy a pre-washed salad bag – go for a bistro or crunchy blend, maybe pick up a tub or two of extra salads like beetroot or three bean to add more interest.
How to make Cajun prawns flatbreads
- Mix together the salad – toss the salad vegetables together in a bowl and sprinkle over the lemon zest.
- Warm the flatbreads – heat a frying pan over a medium heat and warm the flatbreads as per packet instructions – once warmed place on plates.
- Cook the Cajun prawns – heat up another frying pan over a medium high heat – add a splash of olive oil and tip in the prawns and Cajun seasoning – pan fry the prawns – stirring and turning regularly until they are piping hot throughout and entirely pink. This should take around 4-5 minutes depending on the size of the prawns.
- Top the flatbreads – load up with salad – tip over the spicy prawns along with the juices from the pan, scatter over the chopped coriander – serve with lemon wedges.
