Ingredients For Carrot And Coriander Soup

You’ll just need a handful of delicious, wholesome ingredients to make our healthy Carrot And Coriander Soup recipe.

  • 1 tbsp olive oil – you can switch this for butter, sunflower or rapeseed oil if you prefer
  • 1 onion – peeled and diced
  • 2 cloves garlic – finely chopped
  • 1 tbsp ground coriander
  • 500g carrots – peeled and sliced
  • 1 large potato – peeled and diced
  • 1 vegetable stock pot – we use Knorr vegetable stock pots
  • 1 litre boiling water
  • Pinch salt
  • Pinch black pepper
  • Small bunch of fresh coriander – to serve

How To Make Carrot And Coriander Soup

You’ll love how simple it is to rustle up a pan of our delicious, warming carrot soup!

Step Onefry the onions and garlic

  • Add the olive oil to the saucepan over a medium heat.
  • Tip in the onions and garlic and fry for around 5 minutes to soften them up slightly.

Step Two – add the coriander

  • Tip in the ground coriander and stir it into the fried onions and garlic.

Step Three – add the carrots and potatoes

  • Tip in the potatoes and carrots and mix them into the coriander spiced onions.

Step Four – add the vegetable stock

  • Tip in the vegetable stock pot and then top up with 1 litre of boiling water from the kettle.
  • Season well with salt and ground black pepper.

Step Five – cook the carrot and coriander soup

  • Bring the pan of soup to the boil, pop the lid on and simmer for 20 minutes until the carrots and potatoes are tender.

Step Six – blend the soup and serve

  • Blend the soup into a smooth puree and then serve.

Cooks Note! Only use hot liquids in food processors that are designed for use with hot liquids. Otherwise, wait until the liquids have cooled before blending.

Carrot Soup Variations

We’ve given you a delicious, basic recipe for carrot and coriander soup, but there’s lots of ways to put your own twist on the dish and make it just the way you like!

Spicy carrot and coriander soup

Give your soup a kick of spice by adding in some freshly chopped chilli or a teaspoon of mild chilli powder to the onions and garlic at the beginning.

And serve with a scattering of freshly chopped chillies on top, sprinkling of chilli flakes, or red pepper flakes or swirl of hot chilli sauce and squeeze of lemon juice.

You can use your slow cooker to make this delicious carrot soup.

Just add the onions, garlic, carrots, potatoes, ground coriander, vegetable stock, boiling water and seasoning to the slow cooker pan and cook on low for 4-5 hours. Think of it as a dump and go recipe, no need to fry the onions.

Then blend and serve.

How Long Will Carrot And Coriander Soup Keep?

Freshly made carrot and coriander soup will keep in the fridge for up to 2 days.

Be sure to cool and refrigerate the soup within 2 hours of making and store in an airtight container in the fridge.

Reheat the soup in a saucepan or in the microwave. Food should be reheated to a minimum core temperature of 75C.

Can I Freeze Carrot And Coriander Soup

Yes – just cool the leftover soup within 2 hours of making. Then store in an air tight, freezer safe container and keep in the freezer for up to 3 months.

When reheating – be sure to defrost the soup thoroughly prior to reheating. Then reheat properly to a minimum core temperature of 75C.
