Quick and easy chicken and avocado quesadilla makes a nice easy lunch. Cooked and ready to eat in just 5 minutes, perfect for a busy day and a great way of using up leftover roast chicken.
Fancy one? Just take a soft flour tortilla and scatter over the roast chicken, a handful of grated cheddar and sliced chargrilled pepper (from a jar).
Put another flour tortilla on top and cook in a hot frying pan (no oil) for around five minutes – flipping after a couple of minutes to brown the other side.
Once the chicken is heated through – I prise open the quesadilla and add a layer of mashed avocado, reseal and eat.
I don’t like to cook the avocado as it tastes bitter hot.

Chicken and avocado quesadillas ingredients
- 4 mini soft flour tortilla wraps
- 1 avocado
- 2 handfuls of roast chicken
- 2 handfuls of cheddar cheese – grated
- 1 chargrilled pepper (from a jar) sliced.
How to make chicken and avocado quesadillas
- Heat a frying pan over medium heat – don’t add oil.
- Place the tortilla wrap on a board – scatter over the chicken, cheese and peppers and put another tortilla on top of it.
- Put it into the frying pan and cook until crisp – and browning on one side, then flip and cook on the other side.
- Once the chicken is heated through – prise open the quesadilla and add a layer of mashed avocado, reseal and eat.
Make chicken and avocado quesadillas your way
- Switch the chicken for tuna or ham.
- Use different types of cheese.
- Throw in different vegetables – mushrooms, sweetcorn or courgette all work well here.
