A hearty and flavourful dish, chicken and chorizo jambalaya is a family favourite. And you can serve with salads for summer or baked beans for cold days
This dish is perfect for feeding a family and can be made in around 30 minutes. It is also very versatile as you can make it with shrimp or ham instead of chorizo. You can also add quinoa or beans to the recipe if you want to make it more filling or to stretch it to feed more people.
The ingredients are simple and we cheat with this recipe to make things quicker, easier and to get dinner on the table quicker.

Ingredients For Chicken And Chorizo Jambalaya
We use microwave rice for our jambalaya to speed things up but still get a GREAT tasting dinner on the table!
- 1 tbsp olive oil – you can use sunflower oil if you prefer
- 1 onion – finely chopped
- 2 garlic cloves – finely chopped
- 2 yellow pepper – diced
- 600g chicken breast – diced into small bitesized pieces (so it cooks quicker)
- 2 tsp cajun seasoning – we use Schwartz Cajun Seasoning for our chicken jambalaya recipe.
- 400g chopped tomatoes – from a can
- Salt and black pepper – to season
- 2 sachets of Tilda microwave rice – you can use the plain white rice or choose a flavour like firecracker to add more spice!
Equipment Needed To Cook Up Our Chicken And Chorizo Rice One Pot
- Chopping board
- Vegetable knife
- Skillet pan with a lid or large saucepan with lid
- Tablespoon
- Teaspoon
- Cooking spoon
- Microwave
How To Make Chicken And Chorizo Jambalaya
You’re going to love how easy our chicken jambalaya recipe is to cook up and just how good it tastes to eat!
Step One – fry the onions and brown the chicken
- Add the olive oil to the pan and tip in the onions and garlic. Fry over a low heat for around 5 minutes, stirring often.
- Tip in the chicken and fry with the onions until the chicken pieces all turn white.
Step Two – add some Cajun spice and the vegetables
- Sprinkle in the Cajun seasoning, then add a pinch of salt and black pepper.
- Add the peppers and fry for a couple of minutes with the chicken and onions.
- Then tip in the canned tomatoes, give everything a stir together. Then put the lid on and cook over a medium heat for around 15-20 minutes or until the chicken is cooked through properly.
Step Three – add the rice to complete the chorizo and chicken jambalaya
- Cook the microwave rice as per the packet instructions – then tip into the chicken and chorizo and give everything a good mix together to coat the chicken in the spicy tomato sauce.
Step Four – serve the chicken chorizo jambalaya straight away
- Dish up the chicken and chorizo jambalaya straight away alongside your favourite side dishes.
Cooks Note! Do not reheat this meal as the rice has already been reheated once in the preparation of the chicken jambalaya

Jambalaya Chicken And Chorizo Variations
This yummy chicken chorizo rice recipe is totally delicious, but feel free to make changes, add things in, take things out, it’s your dinner after all, eat it your way!
- Add more spice – love a kick of heat from chillies? Then add some more – try a freshly chopped chilli scattered over the chorizo and chicken jambalaya just before serving, or top with candied jalapeño from a jar.
- Need to feed more people? Add another sachet of rice, another can of tomatoes and some extra veggies like black beans or courgettes.
- Like things cheesy? Scatter chicken and chorizo one pot with cheese and melt under the grill just before serving.

Super tasty chicken and chorizo jambalaya recipe that's quick enough for weeknight family dinner.
Ingredients
