Our Chicken And Chorizo Pasta Bake is a BIG favourite in our household. Flavourful chorizo with tender chicken breast and pasta in a rich tomato sauce, topped with a mouthwatering combination of tangy Cheddar cheese and Italian Pecorino cheese. You can have this tasty family meal on the table in less than 45 minutes!

The yummy combination of chicken and chorizo pasta with a gooey, melty cheese topping is just so good! It’s a great family meal for a Sunday instead of cooking up a roast dinner.

Just add your favourite side dishes, like garlic bread, crunchy salad or corn cobs. And let everyone help themselves.

Chicken And Chorizo Pasta Bake Ingredients

To make our delicious chicken tomato pasta recipe, you’ll only need a handful of flavorful ingredients.

  • 1 tbsp olive oil
  • 1 red onion – diced
  • 150g chorizo – diced
  • 600g chicken breast – chopped into bitesized pieces
  • 150g chargrilled peppers – from a jar – I usually buy jarred antipasti peppers for this recipe drain off the oil before using. If you wanted to you could make your own chargrilled peppers here.
  • 500g passata
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Pinch cracked black pepper
  • 350g pasta shells
  • 100g Cheddar cheese – grated
  • 40g Pecorino cheese – grated

Equipment Needed

  • Large oven proof skillet pan (or large saucepan and an oven proof dish)
  • Large saucepan (for the pasta)
  • Chopping board
  • Vegetable knife
  • Tablespoon
  • Teaspoon
  • Cooking spoon
  • Grater
  • Colander

How To Make Chicken And Chorizo Pasta Bake

It’s quite simple to prepare our tasty chicken pasta bake, and you’ll enjoy eating it as much as we do!

Step One – Make the chicken tomato pasta sauce

  • Add the olive oil to a large skillet pan and fry the diced chorizo and red onion for around 5 minutes over a low heat, until the oil turns a lovely orange-y red from the paprika in the chorizo and the onions start to soften.

  • Tip in the diced chicken breast and fry over a low heat until the chicken turns from pink to a white colour on the outside.

  • Next, add in the chargrilled peppers, the passata, the herbs, garlic and black pepper. I add just a pinch of sea salt here too, but it’s optional.
  • Give the chicken chorizo pasta sauce a good mix together. Then bring to the boil and then reduce the heat and simmer with the lid on for 25 minutes or until the chicken is cooked through properly.

Step Three – Cook the pasta

  • When the chicken chorizo pasta sauce has around 10 minutes left to cook, start cooking the pasta. Cook the pasta as per the packet instructions in boiling salted water. Then drain and set to one side.

Step Four – Put the chicken and chorizo pasta bake together

  • Once the sauce is properly cooked, tip in the cooked pasta and mix everything together. If you’re using a separate oven proof casserole dish for your pasta bake then tip it into the dish now.
  • Scatter the grated Cheddar and Pecorino cheese over the top of the pasta bake.

Step Five – Cook the chicken chorizo pasta bake

  • Preheat the grill to high.
  • Slide the chicken pasta bake under the hot grill and let it sizzle until the cheese is all melted, bubbling and golden brown.

Chicken Chorizo Pasta Bake Variations

We’ve given you a fantastic chicken pasta bake recipe, but feel free to play around with it a little and toss in some other ingredients to suit your likes.

  • Add in some mushrooms or a can of sweetcorn to bump up the vegetable content.
  • Go spicy! Try adding in some freshly chopped chillies, a pinch of red pepper flakes or stirring in some chilli powder to the chorizo pasta bake sauce.
  • Make a creamy chicken and chorizo pasta bake recipe, just stir in 2 tbs of double cream or cream cheese to the tomato sauce.
