Our Chicken Burrito Bowl is loaded with succulent chicken and all of your favourite burrito bowl toppings. It’s such a perfect easy summer meal.

Craving a big bowl of delicious salad? Our chicken burrito bowl will satisfy that craving – packed to bursting with delicious Mexican flavours.

I like to make chicken burrito bowls for weeknight dinners during the summer, they’re healthy, flavoursome and the kids just love them!

I do use a few recipe short cuts and convenient shop bought ingredients when I make this dinner because I want it ready fast, with little effort.

Chicken Burrito Bowl Ingredients

  • 2 cooked chicken breasts – I usually choose the lime and coriander or BBQ flavoured chicken breasts for my burrito bowls. You can just pick these up from the supermarket.
  • 1 pack of microwave wholegrain rice – I usually use Tilda microwave rice but you can swap this for any rice flavour you like.
  • 200g canned cooked black beans
  • 200g canned cooked sweetcorn
  • 10 cherry tomatoes – roughly chopped
  • 1/2 pepper – finely sliced
  • Little Gem lettuce – shredded. You could just choose a bag of ready to eat crunchy salad leaves if you prefer.
  • 1 avocado – sliced
  • 2tbs soured cream
  • 4 spring onions – sliced
  • Small bunch of coriander / cilantro – roughly chopped
  • Hot chilli sauce – to serve

How to make chicken burrito bowls

It’s super easy to make a burrito bowl!

  • Cook the rice – just follow the instructions on the microwave rice packet – it’s usually ready in around 2 minutes.
  • Load up the chicken burrito bowl – take your bowl, add the microwave rice and add in the sliced chicken breast.
  • Add your burrito bowl toppings – pile in the salad, tomatoes, peppers, avocado, spring onions, sweet corn and black beans top with soured cream, salsa, coriander and a drizzle of hot chilli sauce.

Cook your own chicken breasts

If you’re cooking some chicken breasts especially to put in your chicken burrito bowl just follow these simple steps for succulent juicy burrito bowl chicken.

  • Preheat the oven to 200C / 400F / Gas Mark 6
  • Place the chicken breasts on a large sheet of tin foil -spread the tops of them with a couple of teaspoons of sun dried tomato paste and sprinkle them with a pinch of smoked paprika and dried oregano. Season with salt and pepper and wrap the foil into a sealed parcel around the chicken.
  • Cook in the oven for around 30 minutes or until the chicken is cooked properly all the way through to the correct temperature and no pink meat remains and the juices run clear.

Chicken Burrito Bowls

A quick and easy chicken burrito bowl recipe with easy short cuts to make it faster!

  • 2 cooked chicken breasts
  • 250g cooked rice 
  • 200g cooked black beans 
  • 200g sweetcorn 
  • 10 cherry tomatoes 
  • 1/2 pepper - sliced 
  • 1 Little Gem lettuce - shredded 
  • 1 avocado - sliced 
  • 200g tomato salsa 
  • 2 tbs soured cream 
  • 4 spring onions - sliced 
  • Small bunch coriander - roughly chopped 


  1. Cook the microwave rice, this usually takes 2 minutes.
  2. Put together the burrito bowl, add rice, sliced chicken, shredded lettuce, black beans, sweetcorn, cherry tomatoes, pepper and avocado.
  3. Spoon over the salsa, add a spoonful of soured cream and sprinkle with spring onions.
  4. Serve scattered with coriander and add hot sauce if you like your food with heat.
