A wonderful, family-friendly chicken chilli dish that is quick and simple to prepare, great to eat, and a definite hit at the dinner table.

I just think when you’re feeding a big family you can’t go wrong with a pan of chilli con carne. All my kids just LOVE a chilli with a selection of side dishes!

From our quick chilli con carne with baked beans, to our healthy turkey chilli, to a proper good old fashioned beef mince chilli con carne you just can’t beat a bowl of chilli!

I like to add sides… cheesy nachos, sour cream, grated cheese, guacamole amongst others. They just help make a chilli a total feast!

Plus chilli is a great family dinner because not only is it a kid friendly recipe but it’s so easy to bulk it up and stretch it to feed more people. Just add extra beans or vegetables and it’ll feed a few more mouths.

Chicken Chilli Ingredients

You’ll just need a handful of ingredients to make this yummy chicken chilli con carne recipe. And the key to great flavour? Check out the chipotle paste!

  • 1 tbsp olive oil
  • 1 onion – diced
  • 2 garlic cloves – finely chopped
  • 2 peppers – roughly chopped
  • 500g passata
  • 400g black beans – from a can

Equipment Needed

  • Chopping board
  • Vegetable knife
  • Teaspoon
  • Tablespoon
  • Cooking spoon
  • Oven proof casserole pan with a lid – or a saucepan to brown chicken then casseroled dish with lid to cook in the oven

How To Make Chilli Chicken

You are going to really like how simple our chilli chicken recipe is to prepare and cook

Step One – sauté the onions and brown the chicken pieces

  • Preheat the oven to 180C / 350F / Gas Mark 4
  • Add the olive oil to the casserole pan and gently fry the onions and garlic over a low heat until softened.
  • Add the chicken pieces and the chipotle paste and fry for a few minutes until the outside of the chicken is no longer pink.

Step Two – add the rest of the chicken chilli ingredients to the pan

  • Tip in the peppers, passata and black beans. Then season with salt and pepper.
  • Bring the chicken chilli con carne to the boil and then pop the lid on.

Step Three – put the chicken chilli into the oven to cook

  • Put the chilli con chicken into the oven and bake for around 1 hour until the chicken is tender and cooked through, and the sauce is thickened.

Step Four – serve

  • Take your chilli con carne to the table and serve with a selection of your favourite side dishes.

Chicken Chilli Recipe Variations

Hey, this is your dinner if you fancy adding something extra or swapping an ingredient then do so!

  • Add more spice! Love things really hot? Then add some freshly chopped chillies or serve with a scattering of jalapeños on top.
  • Like it mild? Swap the chipotle paste for BBQ sauce or smoked paprika for a smoky flavour without the heat.
  • Want more vegetables? Add a can of sweetcorn, some kidney beans or even diced sweet potatoes.

Chicken Chilli Con Carne Recipe Tips

Can I make chicken chilli in advance?

Sure you can, this is nice made the day before and then reheated for dinner. The extra time gives the flavours to really mature.

Can I make chicken chilli con carne in the slow cooker?

Absolutely! This is a simple ‘dump and go’ slow cooker recipe – just add all the ingredients and cook on low for around 6 Horus. Check the chicken is thoroughly cooked before eating.

Can I freeze chilli con chicken?

Yes you can freeze chicken chilli. Just cool quickly within 2 hours of making, then put into a freezer safe container or bag, label and freeze for up to 2 months. Defrost thoroughly before reheating.

What can I do with leftover chicken chilli?

You can use to stuff baked potatoes, use up in fajitas or quesadillas. Or stir through cooked rice as a Mexican style dirty rice.

Try stirring though pasta and melting cheese on top under the grill for a cheesy Mexican pasta dish. Or scatter over nachos, add cheese and melt.

A super easy kid-friendly dinner recipe made with tender chicken breast and black beans. Our chicken chilli is great for weeknight dinner.

Ingredients
