Chicken fajita bowls are a big favourite in our house. They’re so colourful and delicious and best of all really, really easy to make.

That’s exactly what’s needed on busy school nights, when the kids are hungry and you want dinner ready fast.

⭐️ It’s super simple to prep and cook – plus you can use the air fryer! You could even leave the chicken marinating in the fridge all day, they just air fry when you get home.

⭐️ Everyone can create their own fajita bowls – so they add the salads and toppings they LOVE (great for picky kids)

⭐️ It’s packed with fresh vegetables which all count towards your 5-a-day!


CHICKEN FAJITA BOWL INGREDIENTS

FOR THE CHICKEN FAJITA MIXTURE

ingredients needed to make chicken fajita bowls including; chicken breast, onion, olive oil, spices and peppers
  • Olive Oil
  • Skinless Boneless Chicken Breasts – diced
  • Garlic Powder
  • Onion Powder
  • Dried Oregano
  • Ground Cumin
  • Smoked Paprika
  • Red Onion – cut into wedges
  • Bell Peppers – cut into chunks

TO SERVE

  • Iceberg Lettuce – shredded
  • Avocado – diced
  • Radish – sliced
  • Cooked Sweetcorn
  • Tomato Salsa
  • Shredded Cheddar Cheese
  • Soured Cream Dip
  • Nachos
  • Microwave Rice – enough to serve 4

HOW TO MAKE CHICKEN FAJITA BOWLS

  1. Season The Chicken – Take a large mixing bowl – add the diced chicken breast, red onion and bell peppers. Pour over the olive oil and add the seasonings and season with salt and black pepper. Mix well to coat all the chicken and vegetables with the herbs and spices.
  2. Cook the chicken fajita mixture – we use the air fryer but I’ve popped pan and oven methods below too. Add the chicken mixture the air fryer basket – you may need to cook in batches if you don’t have a double drawer air fryer. Air fry the chicken fajita mixture at 200C/400F for around 10-15 minutes or until the chicken is cooked through properly.
  3. Prep the salad and cook the rice – whilst the chicken is cooking – prep your salads and toppings.
  4. Assemble the chicken fajita rice bowls – divide the rice and fajita chicken between the serving bowls and add all your favourite toppings and salads.

TOP TIPS FOR MAKING Chicken Fajita bowls

⭐ Make Ahead – you can season the chicken and leave it to marinate in the fridge all day, then just air fry when you get home.

⭐ Leftover chicken fajita salad bowl is fine to eat next day – just bulk it up with some bean salad or extra nachos. Store leftover chicken fajita salad in an air tight container in the fridge for up to 24 hours.

⭐ You can use chicken thighs if you prefer – this makes the recipe cheaper.

Super Easy And Delicious Chicken Fajita Bowls With Rice And Salad

Ingredients

For The Chicken Fajita Mixture

  • 1 tbsp olive oil
  • 4 skinless boneless chicken breasts - diced
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried oregano
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 red onion - cut into wedges
  • 3 bell peppers - cut into chunks

To Serve

  • 2 cups Iceberg lettuce - shredded

  • 12 radish - sliced
  • 2 cups cooked sweetcorn
  • 1 cup tomato salsa
  • 1 cup shredded Cheddar cheese
  • 1/2 cup soured cream dip
  • 2 cups nachos
  • 2 sachets microwave rice - enough to serve 4

Instructions

Notes

To Pan Fry - add a splash of olive oil to a large skillet or wok style pan and stir fry the chicken fajita mixture for around 10-15 minutes or until cooked through properly.

Oven Method - tip the chicken fajita mixture onto a sheet pan and bake in the oven on 400F / 200C for around 25 minutes or until the chicken is cooked through properly
