Our delicious Chicken Pesto Pasta Salad is a dish that’s perfect for lunch or dinner. It’s easy to make, and can be served hot or cold.

Pesto Chicken Pasta Salad is one of those super easy recipes you can throw together in no time.

Easily quick enough to make on busy weeknights, or alternatively prepare in the morning and serve cold from the fridge at dinner time, pasta salad is especially nice on hot summer days.

Chicken Pesto Pasta Salad Ingredients

You’ll only need a handful of ingredients to make our tasty chicken pasta salad

  • 1 tbsp olive oil
  • 200g asparagus
  • 200g basil pesto
  • 150g mozzarella – we use the mini mozzarella balls
  • 100g baby spinach
  • 50g Parmesan shavings

How To Make Chicken Pesto Pasta Salad

You’ll love how simple our pesto chicken pasta salad is to prepare and cook

Step One – cook the pasta

  • Cook the pasta in boiling salted water as per the packet instructions.
  • Once cooked tip into the colander in the sink and run the pasta under the cold tap to cool it quickly. (if you’re serving this dish hot, then don’t chill the pasta – just add the other ingredients – stir and serve)

Step Two – cook the asparagus

  • Add the olive oil to a frying pan and sizzle the asparagus spears over a medium heat until they’re cooked through.

Step Three – add the chicken pesto pasta ingredients to the bowl

  • Take a large serving bowl and add in the pasta, chicken breast strips, mini mozzarella balls, asparagus, baby spinach leaves and pesto.
  • Mix everything together so it’s all coated in the pesto. Feel free to drizzle in some additional olive oil if you like.

Step Four – scatter over the Parmesan shavings

  • Scatter the Parmesan shavings over the chicken pesto salad and serve.

Ingredients

  • 350g pasta shapes
  • 500g cooked chicken breasts - cut into strips
  • 1 tbsp olive oil
  • 200g asparagus
