You’ll love how easy these peri peri chicken pittas are to make and how delicious they are to eat!
Step One - season the chicken breast
- Slice the chicken breast into small bitesized pieces (so they cook more quickly)
- Tip the chicken pieces into a bowl and pour over the olive oil and peri peri seasoning

Step Two - cook the peri peri chicken pieces
Air Fryer Method
Put the chicken into the air fryer basket and cook on the air fry setting for around 8-10 minutes. Give the basket a shake every few minutes to ensure even cooking.
Check the internal core temperature of the chicken after 8 minutes cook time - it should be 75C or above on an instant read food thermometer - if its not quite there yet, return to the air fryer and check again in a couple of minutes. Continue cooking until cooked through properly.

Pan Fry Method
Add a splash of olive oil to a frying pan, tip in the peri peri chicken pieces and fry until cooked through properly. Check the internal temperature as above with the air fryer method, and continue cooking until cooked through properly.
Step Three - toast the pitta breads
- Pop the pitta breads into the toaster and toast for a couple of minutes to warm them through
- Then carefully cut the warmed pitta breads in half and open up the pitta pockets ready for filling
