Everyone loves this easy chicken rice salad – a really quick and easy Mexican chicken salad recipe that is just so tasty and so simple to throw together!
This chicken rice salad is one of my go-to ‘can’t be bothered cooking’ meals. The ones I throw together when I really don’t want to order take away, but I really don’t want to be in the kitchen either.
It’s a tasty Mexican chicken salad recipe that’s filled with cheat ingredients but big on flavour.
I often muster up the effort to make a tray of nachos to go alongside this, because anything scooped from plate to mouth using a cheesy nacho is a good thing, right?
Chicken Rice Salad Ingredients
Everything you’ll need to make this quick, easy, cheat’y Mexican chicken salad recipe – this is one of our favourite chicken mini fillet recipes!
- 250g rice – we used Uncle Bens Mexican Style rice – the microwave sachets. I love the microwave rice sachets, they’re brilliant for a rice salad base.
- 200g cooked chicken breast – we used a fajita seasoned ready to eat packet of chicken pieces
- 200g canned black beans – ready to eat from the tin
- 200g canned sweet corn – ready to eat from the tin
- 150g baby plum tomatoes – roughly chopped
- 1 avocado – roughly chopped
- Bunch coriander – roughly chopped
- Lime – sliced into wedges

How To Make Chicken Rice Salad
You are going to just love how easy this chicken and rice salad is to make. It’s hand’s down the easiest Mexican chicken salad recipe I make – super fast and super simple!

Step One – Cook the rice
- Cook the microwave rice as per the packet instructions. This will the the base for your rice salad.
Step Two – Mix all the rice salad ingredients
- Add the rice, Mexican chicken pieces, sweetcorn, black beans, chopped avocado, chopped tomatoes and chopped coriander to a bowl.
- Add a squeeze of lime juice and then toss all the Mexican chicken and rice salad together gently with a spoon so that all the ingredients are mixed well.
Step Three – Serve the chicken rice salad
- Simply divide the chicken Mexican bean and rice salad between two bowls and dig in – eat straightaway. Nachos are optional although for me… a must!

Some simple ways to switch up your Mexican rice salad and turn it into other rice salad ideas!
Switch the chicken for another meat or fish
You could make this easy rice salad bowl recipe using shredded ham or cooked spicy prawns they both work really well with Mexican flavours.
Make it vegetarian
You could make this dish entirely vegetarian and just add in some more black beans for additional protein or a handful of grated mature Cheddar cheese to create a tasty rice salad bowl.
Try out different spices and flavour combinations
Go for a different flavour chicken rice salad recipe. Switch up the Mexican vibe for Chinese or Indian, or go Italian – just swap the flavoured rice and marinated meats and add vegetables that suit you. Try chickpeas in the Indian, baby sweetcorn and water chestnuts in the Chinese and mushrooms and artichoke hearts in the Italian.

A super easy chicken rice salad - our Mexican chicken salad with rice and beans is completely delicious and ridiculously easy to make!
Ingredients
- 250g cooked rice

- 200g black beans
