Chicken Rogan Josh - Really Easy Recipe!
Oh, you’re going to love this super easy Chicken Rogan Josh recipe! It’s perfect for those nights when you want a delicious curry but don’t want to spend ages buying a ton of herbs and spices.
This is my go-to for a quick weeknight dinner – it’s packed with flavor but uses a few cooking cheats to speed things up (which is a lifesaver when you're feeding the family, right?). Trust me, there’s no sacrificing taste here – it’s bursting with all the delicious Rogan Josh vibes.
Just serve it with your favourite Indian side dish, gather everyone around the table, and dig in! You’ll thank me later!

EQUIPMENT NEEDED
- Chopping board
- Sharp knife
- Tablespoon
- Large skillet or saucepan with a lid
- Cooking spoon
CHICKEN ROGAN JOSH INGREDIENTS

- Sunflower oil - you can swap for rapeseed oil or butter if you prefer.
- Onion - diced
- Clove garlic - or use lazy garlic from a jar
- Root ginger - or use lazy ginger from a jar
- Rogan Josh Curry Paste - we used a Pataks curry paste jar.
- Bell peppers - diced
- Chicken breast - diced
- Passata
- Small bunch of coriander - roughly chopped (optional)
HOW TO MAKE CHICKEN ROGAN JOSH
Step One - fry the onions, garlic and ginger
- Add the sunflower to a saucepan over a medium heat and tip in the onions, fry for a couple of minutes until they start to soften.
- Add the garlic and ginger - stir well.
- Then tip in the curry paste and around 50ml of water - stir to mix everything together and cook for a couple of minutes.
Step Two - add the chicken and peppers
- Tip in the diced chicken breast and chopped peppers. Stir them into the curried onions. And give everything a good mix together.
Step Three - add the passata
- Pour in the passata and stir everything together well. Add a pinch of salt if using.



Step Four - cook the chicken rogan josh
- Bring the chicken curry to the boil. Then reduce the heat to low, pop the lid on and cook for around 30 minutes. Or until the chicken is cooked through properly.

No time to stand over a pan. Then load up the slow cooker, no need to brown the chicken. Just add all the ingredients to the slow cooker pan. Stir well to mix them together. Then cook on low for around 4 hours.
Cooks Note! All slow cookers cook at different times and temperatures - so be sure to check the chicken is cooked through properly before eating!

CAN I MAKE CHICKEN ROGAN JOSH IN ADVANCE?
You sure can make the curry in advance - you can prepare your chicken curry the day before you intend to eat it or cook, cool, and freeze it for another time.
To freeze chicken curry, it must be cooled rapidly after cooking, within no more than two hours. Then store in freezer-safe containers that are clearly labelled with the date.
Defrost the chicken curry overnight in the refrigerator and check to ensure it is completely defrosted before re-heating.
Reheat the curry in the microwave or in a saucepan over the stove. Stir often to prevent uneven heating and to ensure that the chicken reaches a minimum core temperature of 76C.
