Tasty homemade chicken tikka sandwich filler – a great way to use up leftover roast chicken.

Our super easy chicken tikka sandwich recipe is a really delicious way to use up leftover roast chicken.

I love to make these chicken sandwiches for packed lunches the day after I’ve made a roast chicken dinner. And it’s such a quick and easy recipe, I think you’ll love it.

Chicken tikka sandwich ingredients

You’ll just need a handful of ingredients to make a delicious, creamy chicken tikka sandwich filler

  • 50g shredded chicken – (around a handful) you could also make this with shredded leftover turkey.
  • 1 tbs natural yogurt
  • 1/2 tbs mayonnaise
  • 1/2 tsp tikka curry paste – be sure to use a curry paste that can be eaten uncooked – or use a 1/4 tsp of curry powder instead.
  • Bread roll – I like to use the wholemeal deli rolls topped with seeds or cracked wheat.
  • 1 cup of salad leaves – or baby spinach
  • 6 slices cucumber

How to make chicken tikka sandwich filler

Homemade chicken tikka sandwich filler just takes a couple of minutes to make and is super easy!

  • Shred your leftover chicken – just shred or chop your leftover chicken and toss it into a bowl.

  • Mix the chicken tikka dressing – in a bowl mix together the yogurt, mayonnaise and tikka curry paste.

  • Make the chicken tikka sandwich filler – toss the chicken into the tikka dressing and mix to coat all the chicken.

How to make a chicken tikka sandwich

  • Split the bread roll – I make this without butter as the chicken tikka sandwich filler is creamy, but if you prefer you can butter the bread.
  • Add the salad leaves – put a layer of salad leaves into the bread roll.
  • Add the chicken tikka sandwich filler – cram it all into the sandwich and then top with cucumber slices and tuck in!

Make chicken sandwich filler your way

  • Swap the tikka paste for any other curry paste you like.
  • Go low fat – use low fat yogurt and mayonnaise in your dressing.
  • Add some fruit – try chopped mango or sultanas mixed into the chicken tikka sandwich filler.

Super easy, creamy chicken tikka sandwich filler made from leftover roast chicken.

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 50g roast chicken 
  • 1 tbs natural yogurt 
  • 1/2 tbs mayonnaise
  • 1/2 tsp tikka curry paste  - be sure to use a curry paste that can be eaten uncooked - or use a 1/4 tsp of curry powder instead.
  • 1 wholemeal bread roll 
  • 1 cup salad leaves 
  • 6 slices cucumber 

Instructions

  1. Mix up the chicken tikka sandwich filler - add the yogurt, mayonnaise and curry paste to a bowl and mix. Shred the roast chicken and mix it into the tikka dressing.
  2. Split open a bread roll and fill it with the salad leaves, cram in the tikka sandwich filler and add the cucumber on top.
  3. Squash on the bread roll lid and eat!
