This Chicken and Tomato pasta recipe is super easy, super flavourful and really quick to make. Tender, juicy chicken breast in a delicious creamy tomato sauce with added veggies! It’s the perfect family meal.

  • Chopping board 
  • Sharp knife
  • Tablespoon 
  • Teaspoon 
  • Large saucepan for cooking the sauce – large skillet style is best 
  • Cooking spoon
  • Saucepan or large pot for cooking the pasta 
  • Colander.   

Chicken Tomato Pasta Ingredients

You’ll need a handful of tasty ingredients to make this delicious pasta dish

  • 350g fusilli pasta – you can swap this for any short style pasta, rigatoni, farfalle or penne are all good. 
  • 500g diced chicken breast (boneless skinless chicken breasts)
  • 1 tbsp olive oil – you can use butter if you prefer
  • 1 red onion – diced 
  • 1 red pepper – diced 
  • 2 cloves garlic – finely chopped 
  • 1 tsp dried thyme
  • 1 tsp dried oregano 
  • 1 tsp chilli flakes or red pepper flakes (optional – we like the spicy warmth) 
  • 400g can chopped tomatoes (we use Polpa – they’re a little smaller and richer tomato sauce than regular chopped tomatoes) 
  • 1 cup frozen chopped spinach
  • 200ml heavy cream

How To Make Tomato Chicken Pasta Recipe

Our chicken pasta in tomato sauce is super easy to make 

Step One – sauté the onions, peppers and garlic

  • Add the olive oil to the skillet pan and fry the peppers, garlic and onions for 5 minutes over a low heat.

Step Two – add the chicken

  • Add the chicken breast pieces to the pan and fry over a medium-high heat until the chicken turns from pink to white.

Step Three – add the tomatoes and herbs 

  • Pour in the tinned chopped tomatoes, frozen spinach, sprinkle in the thyme, oregano and chilli flakes. Season well with salt and black pepper. 
  • Give everything a stir, then pop the lid on, bring the sauce to the boil, then reduce the heat and simmer with the lid on for around 20 minutes (or until the chicken has cooked through properly)

Step Four – cook the pasta 

  • When the chicken tomato sauce has 10 minutes cooking time left to go, cook the pasta as per the packet instructions. Then, reserve a cup of pasta water. Then drain the pasta using the colander and set to once side. 

Step Five – add the cream and pasta to the tomato chicken pasta sauce 

  • Stir the cream into the chicken and tomato sauce. Then add in the cooked pasta, give everything a stir together and serve in bowls. You could scatter with grated Parmesan cheese or mozzarella cheese if you wish and a handful of torn fresh basil lor chopped parsley always works well.

Add Your Own Twist To Our Chicken Pasta Recipe

You can add in or switch any ingredients you like and really make this chicken and tomato pasta your own!

  • Add in more vegetables – try adding in mushrooms, courgettes, fennel or aubergine.
  • Switch the pasta – use any pasta you like, it tastes great served with linguine or spaghetti. Or you could serve the chicken tomato sauce with boiled rice, herby couscous or mashed potatoes.
  • Make it cheaper – swap the chicken breast for diced chicken thigh fillets.

Love Your Leftovers 

You can store any leftover chicken tomato pasta in an airtight container in the refrigerator overnight and eat cold next day. Just be sure to cool the pasta within 2 hours of cooking. However, I don’t recommend freezing pasta, it never tastes as good after it’s been frozen.
