How To Make Chilli Nachos
It is super easy to make our delicious mince nachos recipe!
Step One - make the beef chilli topping
- Add the olive oil to a saucepan over a medium heat.
- Tip in the diced onions, peppers, garlic and chillies and briskly fry for five minutes to soften them.
- Then add the minced beef, break it up in the pan using the spoon and fry with the softened veggies until the mince turns brown coloured.
- Next add the chipotle paste and the beans, give everything a good mix together, add a splash of water and bring the pan to the boil.
- Cook with the lid on for around 20 minutes or until the mince is cooked through properly.

Cooks Note! You can make the chilli beef mince up to a day in advance and keep it in the fridge, then reheat thoroughly prior to loading on the nachos.
Step Two - make the loaded chilli nachos
- Preheat the grill to high
- Tip the nachos onto a large baking sheet

- Scatter the hot beef chilli mince and beans over the top of the nachos - spread it out, you want a little in every bite.

- Next, dollop on spoonfuls of tomato salsa so that it mingles into the chilli minced beef and beans.

- Then scatter over the grated cheese, try to get good coverage, if you've used a really big tray you may need to add some extra cheese.

Step Three - cook the beef chilli nachos
- Put the tray under a hot grill and cook until the cheese is melted and bubbling.

Step Four - add the finishing touches to your nachos and chilli
- Scatter over the diced avocado, the chopped coriander and the sliced spring onions.

- Then finally, drizzle over the spicy mayonnaise - we used Nando's Perinaise on our nachos.
