Chorizo Pasta is a favourite in our house. It is spicy, hearty and so delicious! This recipe is great for a cold night or when you want something to warm you up. The pasta has a spicy tomato sauce with chunks of chorizo sausage. The best part? You can make it in less than 30 minutes!
With just a few ingredients, this chorizo pasta recipe is quick and easy! About 30 minutes later, it’s ready.
When all you want is pasta, sausage, and a basic yummy tomato sauce, this is the dish for you. Yes, it’s simple, the chorizo really is the star here!
Chorizo Pasta Ingredients
Our delicious chorizo pasta sauce is made with basic, readily available ingredients.
We buy the spicy little Spanish sausage ready diced, this saves a whole load of time when you want to be cooking real food, fast!
- 1 tbsp olive oil
- 1 red onion – finely diced
- 1 clove garlic – finely chopped
- 1 red pepper – finely diced
- 130g chorizo – diced
- 500g passata
- 1 tsp dried oregano – or use dried mixed Italian herbs
- 350g dried pasta – I usually use pasta shells for this dish but it’s also nice with penne or fusilli
- Salt and black pepper – to season to taste

- Sharp vegetable knife
- Tablespoon

- Cooking spoon
- Saucepan for the sauce
- Saucepan for the pasta
- Colander
How To Make Chorizo Pasta
The quickness in which you can whip up the our chorizo pasta recipe will impress you. It’s fast, simple, and you’ll be able to have supper on the table in less than 30 minutes.
Step One – Sauté the chorizo and diced vegetables
- Add the olive oil to a saucepan and gently fry the onions, peppers, garlic and chorizo over a low heat for around 5 minutes or until softening. All the lovely paprika spiked oil will come out of the chorizo as you fry and add a burst of flavour to the dish.


Step Two – Simmer the chorizo and pepper pasta sauce
- Pour the passata into the pan and sprinkle in the oregano, season with salt and black pepper and stir well to combine all the flavours.
- Bring the chorizo tomato pasta sauce to the boil and then reduce the heat to a low simmer and cook for 25 minutes until the sauce is thickened and smelling amazing!
Step Three – cook the pasta
- When the sauce has been cooking for around 15 minutes it’s time to start cooking the pasta. Just bring a pan of salted water to the boil, tip in the pasta shells. Then bring the pan back to the boil, then reduce the heat and boil the pasta for around 12 minutes (or whatever is recommended on your pasta packet)
- Drain the pasta in a colander, reserving one small teacup of cooking water.
- Then tip the pasta into the chorizo pasta sauce and mix everything together well so that all the pasta shells are well coated in spicy sauce. Loosen the pasta dish if necessary with a splash of the saved cooking liquid.
Step Four – serve your tomato chorizo pasta
- Serve the delicious pasta and chorizo sauce in bowls, scattered with Parmesan and torn basil leaves.
Chorizo Sausage Pasta Variations
We’ve given you a delicious chorizo dish, but feel free to change the ingredients and make it more suited to your own preferences
Switch the chorizo for another sausage
You can swap the chorizo for any diced sausage meat you like – if using proper British sausages, just de-skin them and break up the sausage meat into the pan.
Make it with halloumi
Love Halloumi cheese? Me too! You can easily turn this into a chorizo and halloumi pasta dish. Just serve topped with fried halloumi slices.
Make it spicy
Add more of a kick of heat by using a spicier chorizo sausage or adding in a pinch of chilli flakes.
Add in more vegetables
Try adding in some courgettes, mushrooms or finely sliced fennel, which works really well with chorizo.
