Our Christmas Brussels Sprouts cheesy gratin recipe is just the best way to cook sprouts to go alongside your Christmas dinner! Cheesy, creamy and just so sprouty!

This is one of our favourite Christmas Dinner sides, it’s a lovely wintery vegetable dish that goes great with any roast dinner, but especially a turkey or chicken. It also makes a great Thanksgiving dish too.

Think of is as a cauliflower cheese… but with sprouts! And it’s so good! Easy, cheesy, sprouty and totally delicious.

Christmas Brussels Sprouts Gratin Recipe

Serves – 6

Prep Time – 15 minutes 

Cook Time – approx 25 minutes

Total Time – 40 minutes 

Equipment Needed To Make Christmas Brussels Sprouts

  • Chopping board
  • Vegetable knife
  • Saucepan with a lid
  • Oven proof baking dish
  • Small saucepan
  • Wooden spoon
  • Weighing scales
  • Measuring jug
  • Cheese grater
  • Food processor

Christmas Brussels Sprouts Ingredients

You’ll just need sprouts and a handful of ingredients to make a great cheese sauce!

  • 500g Brussels sprouts – peeled and washed
  • 4 tbsp plain flour
  • 40g butter
  • 400ml milk – for a more luxurious cheese sauce you half milk, half heavy cream
  • 150g Cheddar cheese – grated
  • 100g bread crumbs – made by whizzing the bread in the food processor until breadcrumbs, alternatively use shop bought panko breadcrumbs to top your cheesy Brussels sprouts.
  • Pinch salt and black pepper

Make Sprout Cheese Quicker!

Sometimes you need shortcuts – we get it, so here’s the swaps that’ll still keep the sprout recipe nice!

  • Buy ready made cheese sauce – you can pick up a container of ready made cheese sauce – choose a four cheese pasta sauce, the fresh ones from the fridge by the fresh pasta. Or, you can use some Bisto cheese sauce granules
  • Get ready made breadcrumbs – skip whizzing up dry bread in the food processor and buy them ready made or pick up a box of Panko style breadcrumbs and use those.

How To Make Christmas Brussels Sprouts

Our Brussels sprouts Christmas recipe is super easy to make – you’ll just love this cheesy sprout gratin!

Step One – how long to cook sprouts!

  • Tip the sprouts carefully into a pan of boiling salted water. Cook with the lid on for around 6-8 minutes or until just tender when you insert a knife into them.
  • Drain and tip into the casserole dish.

Step Two – whilst the sprouts cook, make the cheese sauce

  • Put the small saucepan on the hob over a low heat ready to make the roux for the cheese sauce. Add the butter and melt slowly. 
  • Sprinkle in the plain flour and stir it into the butter to create a thick paste – cook this over a low heat for a couple of minutes.
  • Then add the milk a little at a time, mixing it into the paste every time you add some. 
  • When all the milk is added, bring the pan to a gentle simmer and cook for a few minutes until the sauce starts to thicken. 
  • Remove the pan from the heat and add 100g of the grated Cheddar cheese and stir it into the milky sauce until it melts.

  • Season with salt and black pepper.

Step Three – make up the cheesy Christmas Brussels Sprout Gratin

  • Pour the cheese sauce over the spouts in the oven proof dish.

  • Then scatter over the remaining cheese and top with breadcrumbs.

This is the BEST way to cook sprouts!

Step Four – bake the sprout gratin in the oven

  • Bake the sprout gratin in the oven for around 20-25 minutes or until the cheese sauce is bubbling hot, the top is browning and the breadcrumbs are crisping up.
  • Remove the Christmas sprouts recipe from the oven, leave to rest for 5 minutes then serve up!

Tasty Variations To Try

Try flavouring the cheese sauce with some Dijon mustard or garlic granules. You could also add in some fresh herbs like fresh thyme, oregano or sage.

Add extra toppings – sprinkle over some Parmesan cheese, bacon bits or even a drizzle of maple syrup.

Christmas Brussels Sprouts

An easy cheesy sprouts gratin that's perfect with a roast turkey dinner.

Ingredients

  • 500g sprouts - peeled and washed
