A super easy Christmas Carrots recipe – sliced carrots baked with butter, honey and thyme in a foil pack. A foolproof Christmas side dish that’s delicious every time.

When you’re cooking a Christmas Dinner, it doesn’t matter whether it’s for four or twenty, it always seems to be stressful!

And that’s why we’ve put together a really delicious range of Christmas Side Dishes that are super easy to prepare and cook.

Our Christmas Carrots can be prepared ahead of time and left in the foil packet ready to cook with the rest of the Christmas Dinner.

They’re a super easy Christmas side dish and taste amazing! This is my favourite Xmas carrots recipe!

And don’t worry, if you’re cooking for more than four people I’ve scaled up the ingredient quantities at the bottom to help out with making this easy vegetable side dish.

Christmas Carrots Ingredients

Our simple carrot side dish just needs a couple of ingredients – you’ll love how easy this Christmas recipe is!

  • 30g unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp runny honey
  • Pinch salt
  • Pinch cracked black pepper

Equipment Needed

  • Roasting tin
  • 2 sheets of tin foil – large enough to easily hold all your carrots and be folded and scrunched at the ends into a tight package
  • Vegetable brush
  • Vegetable knife
  • Chopping board
  • Tablespoon
  • Weighing scales

How To Make Christmas Carrots

You’ll really like how easy our buttered carrots for Christmas Dinner are to make!

Step 1

  • Preheat the oven to 200C / 400F / 180C fan / Gas Mark 6

Step 2

  • Top and tail the scrubbed carrots, then slice them into fat discs.

Step 3

  • Lay one sheet of tin foil into the roasting tin
  • Lightly grease the centre of the tin foil with the olive oil

  • Lay the sprig of thyme in the middle of the foil. Then start to pile on the carrot slices

  • Slice the butter into dabs and dot all over the carrots
  • Drizzle over the honey then season with salt and pepper.

  • Lay the other sheet of tin foil on top and then scrunch the edges together to form a sealed parcel.

Step 4

  • Place the roasting tin with the foil parcel on it into the oven and bake for around 45 minutes (less if you cut the carrots thinner)
  • Once the carrots are cooked, carefully open the tin foil parcel – do this wearing oven gloves or use a knife to slit the foil. Hot steam will escape so be careful not to burn yourself.

Step 5

  • Tip the carrots into a serving bowl, pour over some of the lovely honey and thyme infused butter and dig in!

Christmas Carrots Recipe Variations

Okay so we’ve given you a totally yummy way to serve your carrots for Christmas, but you can make this heavenly buttered carrots recipe in your own style, try…

  • Adding in some parsnips too amongst the carrots and cook them together.
  • Flavour with nutmeg and cumin instead of thyme for a delicious way to make baked carrots.
  • Skip the honey and use maple syrup for a lovely sweet glazed carrots recipe.
  • Make vegan Xmas carrots and skip the butter, use a plant based spread in place of butter or just use a drizzle of olive oil. Swap the honey for maple syrup or a sprinkling of brown sugar.

Christmas Carrot Recipe Tips!

  • Prepare ahead of time – you can prep these carrot parcels up the day before you want them and just store them in the fridge ready to bake.
  • Reheat the carrots – once cooked you can tip the carrots into a bowl and then cool, store them covered in the fridge for up to a day and then reheat in the microwave for a few minutes then serve.

Cooks Note! – The cooking time should be around the same 40 minutes, you can always check carefully and then reseal the package if they’re not quite done to your liking.
