Christmas Dinner Tray Bake Recipe

Serves – 4

Prep Time – 10 minutes 

Cook Time – 45 minutes

Total Time – around 55 minutes

  • Chopping board
  • Vegetable knife
  • Saucepan – with a lid
  • Baking sheet
  • Teaspoon
  • Tablespoon

Ingredients For Christmas Dinner Tray Bake

Everything you’ll need to make our super easy Christmas Dinner recipe

  • 1kg potatoes – peeled and chopped into chunks
  • 4 carrots – peeled and chopped into chunky batons
  • 3 parsnips – peeled and chopped into chunky batons
  • 200g sprouts – trimmed and cut into halves
  • 2 tbsp olive oil
  • 2 sprigs rosemary
  • 650g chicken breasts
  • 1 tsp dried mixed herbs
  • 4 stuffing balls
  • 12 mini pigs in blankets
  • Couple of sprigs of fresh rosemary – rosemary is one of those fantastic herbs to grow at home

To Serve With The Christmas Dinner Tray Bake

  • Cranberry sauce
  • Apple sauce
  • Gravy – just made from gravy granules

How To Make A Christmas Dinner Tray Bake

You’re going to LOVE how easy this simple roast dinner is to make

Step One – preheat the oven

  • Preheat the oven to 200C / 400F / Gas Mark 6 (180C fan)

Step Two – parboil the root vegetables

  • Place the potatoes, carrots and parsnips into a large saucepan, cover with cold water, add a pinch of salt. Bring the pan to the boil, then reduce the heat to low, and simmer with the lid on for around 7-8 minutes.
  • Then drain the vegetables and return them to the pan. Pour over the olive oil, and season with salt and black pepper. Give the pan a shake so all the vegetables get coated with oil.

Step Two – roast the root vegetables

  • Tip the parboiled root vegetables onto the baking sheet and roast in the oven for 15 minutes.

Step Three – add the rest of the ingredients to the Christmas Dinner tray bake

  • Remove the tray from the oven, lay on the seasoned chicken breasts (just sprinkle with the mixed herbs), the pigs in blankets, frozen stuffing balls and halved sprouts. Tuck in the rosemary sprigs. Season with salt and black pepper. Drizzle over a little more olive oil too if you like.

  • Return the tray to the oven and roast for around 40 minutes or until everything is cooked through properly.

Step Four – serve the Christmas Dinner Tray Bake

  • Serve the Christmas Dinner tray bake along with some cranberry and apple sauce and make up some gravy just using granules.

Recipe Tips And Variations

Use Chicken Thighs or Chicken Legs – you can swap the chicken breasts for thighs or legs if you prefer, just adjust the cooking times as needed.
