How To Make A Pigs In Blankets Platter

Step One – preheat the oven

Step Two parboil the potatoes

Step Three – make the roast potatoes

  • Drain the parboiled potatoes and return to the pan. Pour the olive oil, butter, dried rosemary, pinch of salt and black pepper, and dried stuffing mix onto the potatoes. Shake the pan to melt the butter and coat the hot potatoes in the oils and seasonings.
  • Tip the potatoes into a roasting tin and roast at 200C for around 35 minutes. Give the tin a shake a couple of times whilst they roast, so that they crisp up evenly.
