Courgette Fritters are super easy to make and totally delicious to eat! The perfect way to use up a glut of courgettes. And you’ll just LOVE that chilli lime mayonnaise dip! So good!
This recipe was inspired by a visit to the beautiful medieval Chirk Castle near Wrexham in Wales.
After I’d explored the castle, gardens, estate and woodland I reached my favourite part of all the quaint kitchen garden and the delightful farm shop which sold produce from the estate and the local area.
And just who could resist that basket of home grown courgettes? I could hardly wait to get home to turn them into something delicious.
Our courgette fritters recipe make an absolutely delicious light meal, you could add some crusty bread, maybe a glass of Chardonnay…
Perfect for making the most of this seasons courgettes. And you can easily double the recipe to create a lovely family meal.
Courgette Fritters Ingredients
You’ll just need a handful of basic, wholesome ingredients to make this delicious grated courgette recipe
For the fritters
- 1 large courgette – coarsely grated
- 4 spring onions – finely sliced
- 1/2 red chilli – finely chopped
- 100g gram flour
- 1/2 tsp baking powder
- 50ml cold water
- Salt and pepper to season
- Sunflower oil for frying
For the chilli lime mayonnaise dip
- 3 tbs mayonnaise
- 1/2 red chilli – finely chopped
- zest of a lime
- juice of half a lime

- Chopping board
- Sharp vegetable knife
- Grater
- Mixing bowl
- Teaspoon
- Tablespoon
- Weighing scales
- Measuring jug
- Fork
- Lemon juicer
- 4-5 sheets of paper kitchen towels

How To Make Courgette Fritters
It’s super easy to make vegetable fritters – this is a great recipe for using up odds and ends of vegetables before your next shop.
- Add the grated courgette, sliced spring onions and finely chopped chilli to a mixing bowl.
- Mix the grated courgettes, spring onions and chopped chilli together using a fork.
- Tip in the gram flour and baking powder.
- Add around 50ml of cold water and mix into a batter – you may need to add a little more if your batter seems much too thick. You’re aiming for a gloopy spoonable texture.
- Add sunflower oil to a small frying pan over a medium heat – it should be around 1/2cm deep – you’ll be frying the fritters in two batches.
- Once the oil is hot – add 4 spoonfuls of batter to the pan and fry for around 3-4 minutes. Then gently flip them over and cook for a further 3-4 minutes until the fritters are cooked through and golden brown.


- Remove the fritters and place onto paper kitchen towels to blot up any excess oil.
- Mix up the mayonnaise dip – add the mayonnaise, chillies, lime zest and juice to a small bowl and mix together.
- To serve – put the courgette fritters onto a platter with the chilli lime mayonnaise. I like to add pot of hummus dip too.

Make Courgette Fritters Your Way
- Use different vegetables – maybe butternut squash, aubergine or purple carrots.
- Switch the mayonnaise for low fat Greek yogurt to cut down on the fat content.
- Leftovers are great cold in packed lunches.

The courgette fritters are naturally vegan – you just need to make sure you use plant based mayonnaise for the dip.

Delicious courgette fritters recipes with chilli and lime mayonnaise dip. Naturally gluten free.
Ingredients
