Courgette Fritters With Lime and Chilli Mayonnaise

Courgette Fritters are super easy to make and totally delicious to eat! The perfect way to use up a glut of courgettes. And you’ll just LOVE that chilli lime mayonnaise dip! So good!

This recipe was inspired by a visit to the beautiful medieval Chirk Castle near Wrexham in Wales.

After I’d explored the castle, gardens, estate and woodland I reached my favourite part of all the quaint kitchen garden and the delightful farm shop which sold produce from the estate and the local area.

And just who could resist that basket of home grown courgettes? I could hardly wait to get home to turn them into something delicious.

Our courgette fritters recipe make an absolutely delicious light lunch or side dish, you could add some crusty bread, maybe a glass of something chilled…

Perfect for making the most of this seasons courgettes. And you can easily double the recipe to create a lovely family meal.

Courgette Fritters Recipe

Makes – 8 fritters

Prep Time – 10 minutes

Cook Time – 15 minutes (cooked in two batches – to make cooking time shorter use two pans)

Total Time – around 25 minutes

Equipment Needed

  • Chopping board
  • Large bowl – or mixing bowl
  • Teaspoon
  • Tablespoon
  • Weighing scales
  • Measuring jug
  • Fork
  • Lemon juicer
  • 4-5 sheets of paper kitchen towels

Courgette Fritters Ingredients

You’ll just need a handful of basic, wholesome ingredients to make this delicious grated courgette recipe

For the fritters

  • courgette – coarsely grated – just give the skin a wash, and grate unpeeled.
  • spring onions (scallions) – finely sliced
  • red chilli – this adds a nick kick of heat, you can omit the seeds for a milder warmth, or skip altogether if you prefer to make a non-spicy fritter.
  • gram flour – gram flour is made from chickpeas, so it’s naturally gluten free and its a great store cupboard staple. You can use it to make all sorts of delicious foods, from onion bhajis, flatbreads to pancakes and more.
  • baking powder – this helps the fritters to rise and puff up as they fry.
  • cold water – for mixing the ingredients into a batter
  • Salt and pepper to season
  • Sunflower oil for frying – you can swap this for vegetable, rapeseed or olive oil if you prefer.

Cooks Note! We make our courgette fritters without eggs. And the recipe is naturally gluten-free, you’ll just need to double check the ingredients you use in-case they have gluten contamination.

For the chilli lime mayonnaise dip

  • mayonnaise – using store-bought jars of mayonnaise as the base for your flavoured mayonnaise is the quickest and easiest way to make a delicious creamy dip.
  • red chilli – finely chopped
  • lime juice and zest

How To Make Courgette Fritters

It’s super easy to make vegetable fritters – this is a great recipe for using up odds and ends of vegetables before your next shop.

Step One – add the courgette fritter ingredients to a bowl step at a time as below

  • Add the grated courgette, sliced spring onions and finely chopped chilli to a mixing bowl.

Step Two – mix the courgette fritter batter

  • Mix the grated courgettes, spring onions and chopped chilli together using a fork.

Step Three – add the gram flour to the courgette fritters ingredients

  • Tip in the gram flour and baking powder.

Step Four – mix into a batter with water

  • Add around 50ml of cold water and mix into a batter – you may need to add a little more if your batter seems much too thick. You’re aiming for a gloopy spoonable texture.

Step Five – warm the cooking oil

  • Add sunflower oil to a small frying pan over a medium heat – it should be around 1/2cm deep – you’ll be frying the fritters in two batches.

Step Six – fry the courgette patties

  • Once the oil is hot – add 4 spoonful’s of courgette fritter batter mixture to the pan and fry for around 3-4 minutes. Then gently flip them over and cook for a further 3-4 minutes until the fritters are cooked through and golden brown.

Step Seven – remove the cooked courgette fritters and soak up the oil

  • Remove the fritters and place onto paper kitchen towels to blot up any excess oil.

Step Eight – mix up the spicy mayonnaise dip

  • Mix up the mayonnaise dip – add the mayonnaise, chillies, lime zest and juice to a small bowl and mix together.

Step Nine – serve the courgette fritters

  • To serve – put the courgette fritters onto a platter with the chilli lime mayonnaise. I like to add pot of hummus dip too, and sweet chilli sauce as a dip works deliciously with this recipe too. These actually make a delicious snack or appetizer too.

Make Courgette Fritters Your Way – Try These Tasty Variations!

  • Use different vegetables – maybe butternut squash, aubergine or purple carrots, or even make courgette and pea fritters
  • Add some fresh herbs – add in some fresh herbs to the courgette fritter batter – try mint, dill, coriander or chives. They’re also nice with a couple of cloves of chopped garlic.
  • Add more spices – you can flavour the fritters using some extra spices, try ground cumin, a pinch of turmeric or ground coriander.
  • Switch the mayonnaise for low fat Greek yogurt to cut down on the fat content.
  • Leftovers are great cold in packed lunches.
  • Make cheesy courgette fritters – you could add crumbled feta cheese to make courgette and feta fritters, or try stirring some grated Cheddar cheese through the fritter mixture.

The courgette fritters are naturally vegan – you just need to make sure you use plant based mayonnaise for the dip.

Courgette Fritters With Lime and Chilli Mayonnaise

Delicious courgette fritters recipes with chilli and lime mayonnaise dip. Naturally gluten free.

Ingredients

  • 1 large courgette - coarsely grated

  • 1/2 tsp baking powder 
  • 50ml water

  • juice of 1/2 lime
