Our courgette salad really makes the most of delicious seasonal courgettes in this tasty, flavoursome courgette side dish.

Our courgette salad is packed to bursting with flavour, simple to throw together and great alongside pasta, chicken or fish. 

This is one of my favourite things to do with courgette and I can’t help but love the prettiness of this salad – it looks almost too good to eat! 

It’s always good to have some recipes with courgette, especially if you grow them in the garden because by summer you could have simply loads to use up!

Courgette salad ingredients

For the courgette salad…

  • 2 courgettes – sliced
  • 1 tbs of olive oil
  • 4 handfuls of rocket or baby herb salad leaves
  • 6 radish – sliced
  • handful of mint leaves – finely chopped
  • 1 red chilli – deseeded and finely chopped

For the courgette salad dressing…

  • 1 tbs Balsamic vinegar
  • 2 tbs extra virgin olive oil
  • pinch sea salt
  • pinch cracked black pepper

How to make courgette salad

  • Add a splash of olive oil – to a frying pan and gently cook the courgettes until charring.
  • Remove from the pan – onto a paper towel, to drain any excess oil and leave to cool for a few minutes
  • Throw together the salad – by mixing salad leaves and radishes on a platter.
  • Scatter over the courgettes – then sprinkle over the mint and chilli.
  • Mix up the dressing – by whisking together the dressing ingredients with a fork.
  • Drizzle over the salad just before serving.

Ingredients

  • 2 courgettes - sliced
