Courgette Salad with Mint & Chilli

Our courgette salad with chilli and mint is packed with flavour. It makes the most of courgette season and is perfect for adding to summer meals.

Our courgette salad is a tastebud pleaser! Simple to throw together and great alongside pasta, chicken or grilled fish.

This is one of my favourite things to make with courgettes and I can’t help but love the prettiness of this salad – it looks almost too good to eat! 

It’s always good to have some recipes with courgette, especially if you grow them in the garden because by summer you could have simply loads to use up!

Quick and easy – you can throw together a bowlful of this bright delicious zucchini salad recipe in just 10 minutes. So it’s the perfect quick and healthy side dish. 

Easily add in extra ingredients – this is a great base salad for adding in some extras – try sprinkling over goats cheese, toasted pine nuts or cherry tomatoes.

Courgette Salad Recipe 

Serves – 4

Prep time  – 5 minutes 

Time to cook – 5-10 minutes 

Total time – 15 minutes

Courgette Salad Ingredients

You’ll just need a handful of fresh and tasty salad ingredients to make this delicious zucchini side dish.

For the courgette salad…

  • 2 courgettes – sliced
  • 1 tbsp of olive oil
  • 4 handfuls of rocket or baby herb salad leaves
  • 6 radish – sliced
  • handful of mint leaves – finely chopped, you can swap this for freshly torn basil leaves if you prefer 
  • 1 red chilli – deseeded and finely chopped

For the courgette salad dressing…

  • 1 tbs Balsamic vinegar – you can swap this for freshly squeezed lemon juice if you prefer
  • 2 tbsp extra virgin olive oil
  • pinch sea salt
  • pinch cracked black pepper

Equipment Needed

  • Chopping board 
  • Vegetable knife 
  • Griddle pan – or frying pan – or you can cut the courgette thicker and cook on the BBQ 
  • Small bowl 
  • Kitchen paper 
  • Serving platter 

How To Make Courgette Salad

You’ll love how simple this great side dish is to prepare and cook!

Step One – gently griddle or grill the courgettes  

  • If cooking in a frying pan – add the olive oil, then cook the courgettes over a medium heat until they’re starting to char on the edges. 
  • If cooking the courgette slices in a griddle pan or on the BBQ toss the courgettes in olive oil, then cook. This will just help to stop them sticking to the pan or BBQ grill. 
  • Once cooked, remove from the pan onto kitchen paper to blot up any excess olive oil and to cool for a few minutes.

Step Two – arrange the salad on the serving plate

  • Throw together the salad – by mixing salad leaves and radishes on a platter.
  • Scatter over the courgettes – then sprinkle over the mint and chilli.
  • Mix up the dressing – by whisking together the dressing ingredients with a fork in a small bowl.
  • Drizzle the dressing over the salad just before serving

Make Courgette Salad Your Way

Use our courgette side dish as a base salad and add in any extra ingredients you like to really makes this salad your own  

  • Add in some cherry tomatoes, you could blister these in the pan or on the BBQ first.
  • Scatter over toasted pine nuts or walnuts 
  • Add in some crumbled goat’s cheese 
  • Make up the salad dressing with added garlic – roast the garlic, squeeze from the skins and then mix into the dressing. 
  • Add in some protein, serve the salad topped with grilled chicken or salmon

How To Serve Courgette Salad 

  • Perfect alongside pasta dishes or grilled chicken and fish
  • As a lunch salad with crumbled feta and toasted pine nuts

Delicious fresh salad recipe

Ingredients

  • 2 courgettes - sliced
  • 1 tbs olive oil
  • 200g mixed salad leaves - rocket or baby herbs
  • 6 radish - sliced
  • handful of mint leaves - finely chopped
  • 1 red chilli - deseeded and finely chopped

for the dressing

  • 1 tbs Balsamic vinegar
  • 2 tbs extra virgin olive oil
  • sea salt
  • black pepper

Instructions

  1. Add a splash of olive oil to a frying pan and gently cook the courgettes until charring.
  2. Remove from the pan onto paper towel and leave to cool for a few minutes
  3. Throw together the salad by mixing salad leaves and radishes on a platter.
  4. Scatter over the courgettes - mint and chilli.
  5. Mix up the dressing by whisking together the dressing ingredients with a fork.
  6. Drizzle over the salad just before serving.
