Creamy Chicken Casserole Ingredients

To make our delicious creamy easy chicken casserole in the slow cooker you’ll just need a handful of ingredients

  • 1kg chicken thigh fillets – boneless and skinless (you can use chicken breast if you prefer)
  • 1 onion – peeled and diced
  • 250g mushrooms – peeled and sliced
  • 2 sticks celery – thinly sliced
  • 2 tsp dried oregano
  • 2 cloves garlic – chopped
  • Pinch salt
  • Pinch black pepper
  • 250ml chicken stock
  • 100ml cream
  • Handful chopped parsley – to serve

How To Make Creamy Chicken Casserole In The Slow Cooker

You’ll love how simple this easy creamy slow cooker casserole is to make. It’s a great chicken recipe

Step One – Add the chicken, vegetables and seasonings to the slow cooker

  • Preheat the slow cooker to high.
  • Add the chicken thighs, mushrooms, onion, celery, oregano, garlic, a pinch of salt and a pinch of black pepper to the slow cooker pan.

Step Two – add the chicken stock

  • Pour chicken stock over the mixture, then give the chicken and vegetables a gentle stir together in the slow cooker pan.

Step Three – cook the creamy chicken stew recipe in the slow cooker

  • Cook the chicken casserole in the slow cooker on HIGH for 3 hours 30 mins.

Step Four – shred the chicken and add the cream

  • After 3 hours 30 minutes cooking time, take two forks and shred the chicken thighs – just pull the meat with the forks, it will fall apart effortlessly.
  • Stir the shredded chicken into the casserole sauce, then add the cream and stir well to combine into a creamy sauce.
  • Pop the lid back onto the slow cooker and continue to cook for the last 30 minutes.
  • Then sprinkle with freshly chopped flat leaf parsley and serve.

Cooks Tip! Once the chicken casserole is cooked – if it needs thickening up then do this by adding a couple of heaped tsp of cornflour to a cup and mixing into a paste with some cold water. Then stir this through the sauce and cook for a few minutes to thicken.

What To Serve With Creamy Chicken Casserole

This is a really creamy, proper comfort food dish, so it’s great served with your favourite carbohydrates, and maybe a green vegetable for balance!

Wondering what to have with chicken casserole? We’ve got your covered!

  • Mashed potatoes – can’t beat a bowl of mashed potatoes topped with creamy chicken stew and plenty of black pepper! This casserole is extra nice served with our cheesy mash.
  • Plain boiled rice – or for ease, ping a couple of sachets of flavoured Tilda rice in the microwave.
  • Pasta – when I serve this with pasta I tend to cook penne, and toss it with butter and finely grated parmesan, before topping with the creamy chicken stew.
  • Garlic bread – garlic flatbreads, baguettes or dough balls always work well with creamy chicken. You can make your own air fryer garlic bread too.
  • Crusty bread – try tiger bread buttered with salted butter, it’s the perfect thing to dunk in stew
  • Mixed vegetables – for balance, add some steamed broccoli or peas just cooked from the freezer.

How To Use Up Leftovers

If you’ve any leftover creamy chicken casserole then try any of the following easy meal ideas!

Make a creamy chicken pie

Use the leftover chicken casserole as a pie filling. If you’ve not quite enough, then add some vegetables a tin of sweetcorn or baby carrots, or mushrooms will bulk it up.

Then top with shop bought pastry lid – shortcrust or puff pastry. You could top with mashed potatoes and sprinkle over some Cheddar cheese to make a chicken cottage pie.

Make dirty rice

This is one of my favourite ways to use up leftover stew, curry or casserole. Just reheat the leftovers, add in some extra veggies like fried onions, mushrooms, can of sweetcorn or beans.

If you’re low on sauce you can always stir through a warmed can of cream of chicken soup or cream of mushroom soup. Then stir through cooked rice with a handful of cheese.

For extra taste, put this into a baking dish a little like a rice casserole, sprinkle the top with a couple tablespoons of crushed ritz crackers and melt the cheese under the grill. So good!

Reheat the chicken casserole, let it boil thoroughly to reheat properly. Then serve the chicken in bread rolls topped with grated cheese.

How to store leftover chicken casserole

Leftovers must be chilled and stored in the refrigerator within 2-hours of being cooked. Store them in an air tight container and use within 24 hours. Be sure to reheat the casserole properly so it’s piping hot throughout and reheat to a minimum of 75C, cooking at that temp for 4-5 minutes.

Can I freeze leftover creamy chicken casserole?

You can freeze this recipe, although we often find the creamy sauce splits when reheated.

How can I add flavour to a bland casserole?

If your casserole isn’t a flavoursome as you would have liked. Up the seasoning – add in some more salt, pepper, maybe a squeeze of honey to balance with sweetness. You can also add in extra herbs – thyme, rosemary and oregano work well with chicken.

You can also use lighter herbs such as dill or tarragon to flavour up a casserole just before serving. Just snip fresh herbs, scatter over the casserole, stir gently and serve. Tarragon is delicious with chicken.
