Creamy Tomato Basil Soup Ingredients

Everything you need to make a delicious Mediterranean style Tomato Basil Soup

Ingredients for tomato basil soup including; two tins of mutti tomato sauce, olive oil, basil, garlic, onions, carrots, celery, spices
  • 1 tbsp olive oil
  • 1 brown onion – diced
  • 1 large carrot – peeled and diced
  • 2 sticks celery – sliced
  • 4 fresh basil stalks – chopped
  • 2 cloves garlic – finely chopped
  • 28oz can tomato paste (2 x 400g finely chopped tomatoes – we usually use Mutti Polpa)
  • 1 cup boiling water
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/3 cup heavy cream
  • handful of fresh basil leaves
  • pinch sea salt
  • pinch ground black pepper

How To Make Creamy Tomato Basil Soup

Step One – sauté the chopped vegetables

  • Heat the olive oil in a large saucepan.
  • Add in the chopped onions, celery and carrots and fry for 5 minutes.
  • Then stir in the chopped garlic and basil stalks and fry for a couple minutes longer.

Step Two – add the tomatoes and water

  • Next pour in the tomatoes, add the herbs and spices and mix well.
  • Top up the pan with around a cup of boiling water.
  • Bring the soup to the boil, season with salt and black pepper, and simmer with the lid on for 30 minutes.

Step Threeblend the tomato basil soup with cream

  • Then add the heavy cream and basil leaves, blend the soup (if you want to freeze the soup, take some out before you blend with the cream as creamy soups don’t freeze well and become separated when reheated)

Step Four – serve the tomato basil soup

  • Serve the delicious creamy tomato basil soup with your favourite bread or grilled cheese sandwich for dunking.

How To Store And Reheat Creamy Tomato Basil Soup

How To Store – leftover soup can be cooled, and stored in an airtight container in the refrigerator for up to 2 days.

Freezing Creamy Soup – do not freeze the soup one you’ve blended with cream. If you want to freeze the soup, do so before you add the cream. To freeze, cool and store the soup in a freezer safe container in the freezer for up to 3 months. Defrost thoroughly before reheating.

How To Reheat Tomato Basil Soup – put the soup into a saucepan on the hob over a low heat and reheat slowly, stirring often. Serve once it’s piping hot and reheated throughout properly.

Recipe Variations And Ingredient Add-Ins 

Add in some more veggies – try adding in chargrilled bell peppers, or roasted sweet potatoes.
