A lovely summer breakfast recipe, perfectly delicious. Artisan crispbread topped with a generous serving of fresh cool cream cheese and sliced juicy peach, finished with a scattering of shredded mint.
This lovely breakfast is a great start to the day – add a cup of fresh coffee and you’re away!
I use the Peter’s Yard artisan crispbread for this recipe as they are just so good! The cream cheese for me has to be full fat Philadelphia and choose a really juicy peach, the mint I grow in little pots in the garden it adds a lovely freshness to the recipe.
Crispbread with peaches and cream cheese is so simple it’s hardly a recipe at all, this makes a great quick meal idea and fab healthy breakfast recipe.

- 2 crispbread
- 2 tbs cream cheese
- 1 juicy peach
- a couple of mint leaves
- Spread the crispbreads with cream cheese.
- Slice the peach and arrange on top of the cream cheese.
- Sprinkle with finely shredded mint leaves.
A delicious start to the day - for added zing serve with a freshly ground coffee.
All that’s left to do now is find a nice sunny spot to sit and enjoy!
