These easy to make crispy breakfast potatoes are the perfect way to kick-start your day! Crispy golden cubes of carbs, served with eggs = perfection!

You Can Make Ahead – you can make these potato the day before and just warm them up in the morning, using the air fryer or a fried with butter in a skillet.

Equipment Needed 

  • Chopping Board
  • Vegetable knife
  • Saucepan with lid
  • Colander
  • Skillet Pan or Frying Pan
  • Teaspoon
  • Tablespoon
  • Cooking spoon

Ingredients For Breakfast Potatoes 

Everything you need to make these delicious fried skillet potatoes for breakfast.

  • 4 medium sized potatoes (we use Albert Bartlett Rooster potatoes – but you can use russet potatoes, Yukon gold potatoes or any red potatoes you like)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried parsley
  • 1/2 tsp cayenne pepper

Optional – you can add paprika and fresh herbs too for extra flavors.

How To Make Breakfast Potatoes

You’re just going to love how easy these crispy potatoes are to make!

Step One – peel and parboil the potatoes

  • Peel and chop the potatoes into small bite-sized pieces (you want them to cook quickly).
  • Put the potatoes into a pan of cold water, add a pinch of salt, bring to the boil and then cook for around 4-5 minutes until just tender.

Step Two – fry the breakfast potatoes

  • Drain the potatoes using a colander.
  • Then heat the olive oil in a skillet pan on the hob.

  • Toss in the drained potatoes – add the seasonings and a pinch of salt and black pepper and stir and jumble the potatoes around so they’re all coated in seasoning.

Step Three – cook the breakfast potatoes until they crisp

  • Fry over a medium high heat for around 6-7 minutes until the potatoes start to crisp up and turn golden.

Step Four – serve the fried breakfast potatoes

  • Serve with eggs cooked in your favourite way.

What To Serve With Breakfast Potatoes 

These delicious crispy breakfast potatoes go with lots of different breakfast combos – I’ve popped a few of our faves below for you to try out.

Just With Eggs – you can serve these crispy potatoes with eggs sunny side up, topped with a poached egg, or with delicious, creamy scrambled eggs on the side.

English Breakfast Style – go for the full English, and serve the easy breakfast potatoes alongside fried eggs, bacon, sausages, mushrooms, grilled tomatoes and baked beans.

Sausage And Potatoes – these breakfast potatoes are lovely with grilled sausages (try turkey sausage too) and just a ketchup dip or a drizzle of hot sauce.

In Omelette – add some veggies to the skillet with the potatoes – try cherry tomatoes, red bell pepper, green bell pepper, mushrooms or scallions. Fry, then pour over beaten eggs, top with cheese and finish under a hot grill until the eggs are set.

Handy tips to make the best of your breakfast potatoes

Cook Them Differently

Air Fryer – to make air fryer breakfast potatoes, toss the potatoes in the oil and seasonings, then place in the air fryer basket and air fry on 350F/180C for around 15-20 minutes or until cooked through and crispy.

Oven Cook – make these potatoes in the oven, similar to roast potatoes – just toss the parboiled potatoes in the oil and seasonings, then spread onto a baking sheet and bake in the oven at 400F/ 200C for around 15 minutes or until tender inside, cooked, golden and crispy.

How To Store Leftover Breakfast Potatoes 

Love your leftovers! Any leftover potatoes can be cooled quickly and stored in an airtight container in the refrigerator for up to 2 days.

How To Reheat Breakfast Potatoes 

When reheating, just pop them in the air fryer on 350F / 180C and air fry until piping hot and heated properly throughout.

Alternatively melt a dab of butter in a skillet pan and fry them over a medium heat until they’re warmed through and heated properly throughout.
