Easy Way To Feed A Crowd – I’ve no idea why breakfast casserole isn’t more of a thing in the UK, it’s a brilliant way to feed the family breakfast, it’s great for a weekend brunch, Christmas morning, baby showers, brunch with the girls, whatever! Just bake and slice. Super easy!

Equipment Needed 

Ingredients For Making Hashbrown Breakfast Casserole With Sausage And Cheese

Everything you’ll need to make our BEST hash brown breakfast casserole for weekend brunch.

  • 1 tbsp butter
  • 18 frozen hash browns – defrosted
  • 1lb (500g) breakfast sausages – cooked and crumbled – we remove the sausage skins, then break up and fry. We use pork sausage but you can swap for turkey sausage if you prefer.
  • 1 red bell pepper – finely chopped
  • 1 onion – finely chopped
  • 10 large free range eggs
  • 1 cup sour cream
  • 2 cups sharp Cheddar cheese – grated (but its also nice topped with shredded mozzarella)
  • pinch salt
  • pinch black pepper

How To Make A Hashbrown Breakfast Casserole 

You’ll LOVE how easy this breakfast casserole is to throw together!

Step One – butter the casserole dish

  • Grease a 9 x 13 inch baking dish. Dab some butter onto a piece of kitchen paper towel, then rub it all around the bottom and up the sides of the casserole dish to stop the egg mixture sticking.

Step Two – layer up the hashbrowns, sausages and vegetables

  • Lay the defrosted hashbrowns into the bottom of the casserole dish. Just fit them in as best you can.
  • Top the hash brown layer with the cooked crumbled sausages, diced peppers and onions.

Step Three – whisk the egg mixture

  • Crack the eggs into a large bowl, pour in the sour cream and add half the cheese – season with salt and black pepper. Then whisk the mixture together.

  • Pour the eggy cheese mixture over the casserole.
  • Then top with the rest of the shredded Cheddar cheese.

Step Four – bake the hashbrown casserole

  • Bake in the oven at 350F / 180C for around 40-45 minutes or until the eggs are cooked through to your liking.

What To Serve With Hashbrown Breakfast Casserole 

Hashbrown breakfast casserole is loaded with hash browns, sausages, fresh veggies and eggs so it’s a pretty complete meal in itself.

However, if you’re ALL about the sides (like me) then any of the suggestions below are great with a breakfast casserole.

Should I thaw hashbrowns before cooking?

For breakfast casserole yes, always thaw the frozen hashbrowns otherwise they tend to make the casserole soggy.

Can I make hash brown casserole the day before?

You can absolutely prep this dish the night before – just be sure all the ingredients are cold (so let the sausage meat cool properly after cooking) Then layer up the hashbrown breakfast casserole in the baking dish as above.

Wrap the dish in foil tightly and store in the refrigerator until ready to bake next day. When baking next day, take the casserole out of the fridge around 20 minutes before you cook it.

What else can I put in a hash brown casserole?

You can add anything you like to eat! Try sliced mushrooms, sautéed courgettes.

Add in some chopped spinach, chopped cooked ham, or a kick of heat with some freshly chopped chillies or jalapeño.

You could also swap the hashbrowns for cooked diced potatoes or defrosted tater tots if you prefer.

How to store leftovers

Leftover casserole can be cooled quickly and stored in the fridge in an airtight container for up to 1 day. We tend to eat leftovers cold, on the go. If I’m grabbing to eat on the go I just wrap in greaseproof paper.
