Easy Blueberry Scones Recipe

Our soft and crumbly homemade blueberry scones are super easy to make. Serve with clotted cream and blueberry jam for a simple afternoon tea treat.

This tried and true scone recipe is simply delicious. The scones are scattered with juicy fresh blueberries that burst with sweet jammy flavour into the scone dough as it bakes.

And... as every with a British scone recipe, they're perfect served with a slathering of real clotted cream, the type with the golden crust. And of course a splattering of jam. The essential toppings for every good scone! But is it jam or cream first?

Ingredients For Blueberry Scones

You'll only need a handful of basic baking ingredients and some fresh blueberries to make these delicious homemade scones.

Blueberry Scones Ingredients

  • 1 ¾ cups self-rising flour
  • 1 teaspoon baking powder
  • 4 tablespoon unsalted butter - at room temperature
  • ⅓ cup superfine sugar
  • ½ cup fresh blueberries
  • 5oz whole milk
  • 1 egg - beaten with mini whisk
  • pinch salt

Blueberry Scones Ingredients - Metric

  • 220g self raising flour
  • 1tsp baking powder
  • 60g unsalted butter - at room temperature
  • 60g caster sugar
  • 80g fresh blueberries - you could also make this recipe with strawberries or raspberries
  • 150ml full fat milk
  • 1 egg - beaten with a whisk
  • pinch of salt (optional, I rarely add it although I know lots of you like to add a pinch of salt to sweet recipes)

How To Make Blueberry Scones

Step One - preheat the oven and grease the baking sheet

  • Lightly grease the baking sheet using just a dab of butter.

Step Two - make the scone dough

  • Add the self rising flour and baking powder to a bowl, and mix.
  • Then drop in the unsalted butter. Rub it into the flour mixture using your finger tips to make a breadcrumb like texture.
  • Next tip in the sugar and sprinkle in the fresh blueberries. Give everything a gentle mix to combine.
  • Then pour the milk into the dry ingredients in the bowl a little at a time, mixing all the time with a knife, keep adding the milk until you get a stiff pliable scone dough. Then put your hands into the bowl and knead the dough into one whole circle.

Step Three - shape the blueberry scones

  • Cut the scone dough into six equal wedges using a sharp knife. Then shape each one into a scone shape, do this on a lightly floured surface, using floured hands and a butter knife to mould the dough. You can use a pastry cutter, but this is the way my grandma taught me to bake, so it's the way I still use. I kinda think it's the secret to making great scones!
  • Pop the scones onto the sheet pan ready to bake. If you prefer you can line the baking sheet with parchment paper first.

Step Four - bake the scones

  • Brush the scones with beaten egg then bake in the hot oven for around 10 minutes or until the scones are risen and turning golden brown. The blueberries will cook and pop their vivid purple juices into the scones and it'll taste lush!

  • Once the scones are cooked, remove them from the oven and slide them onto a cooling rack to cool down.

Tasty Tips From Our Kitchen To Make Homemade Blueberry Scones Perfect Every Time!

There's lots of little ingredient twists you can make with this simple scone recipe and really make them your own.

Add some lemon

Lemon and blueberries are a match made in heaven, so feel free to add some lemon zest to the scone batter. When I add lemon zest I serve them with lemon curd, rather than jam and lashings of clotted cream. You can also drizzle with a simple lemon glaze to the scones too and serve just as they are. Or top with a lemon icing, made with icing sugar and lemon juice.

Add some chocolate

White chocolate and blueberry scones work really well. Just scatter some white chocolate chips through the scone dough and add a just ½ teaspoon vanilla extract. This will create super squidgy blueberry and chocolate chip scones that go great with coffee.

How to make a good scone

I think the secret to making really good scones, is to go at it with a rustic, lazy, laid back approach. Do as little as possible, don't overwork the dough, don't us too much flour on the surface when you shape them.

How to store scones

Scones dry out really quickly so it's best to make them in small batches. Any leftover scones can be stored in an airtight container for up to 2 days.

Can I freeze scones?

Yes, scones freeze really well, just let them cool, then wrap individually in parchment paper to stop them sticking. And pop them in a freezer bag or container and freeze for up to 3 months. To use, just remove them from the freezer and let them defrost.

How to reheat scones?

Just place the scones in a preheated oven at 300F/150C for around 5-8 minutes. Or heat in the microwave on high for around 10-20 seconds.
