  • Vegetable knife
  • Teaspoon
  • Tablespoon
  • Cooking spoon
  • American measuring cups
  • Cheese grater
  • Casserole dish or baking dish
  • Skillet pan – to fry the chicken if not using a hob to oven safe casserole pan.

Ingredients For Chicken And Broccoli Casserole

Everything you’ll need to make our delicious, easy chicken and broccoli rice casserole for dinner

  • 1 tbsp olive oil – you can swap for butter if you prefer
  • 1 onion – diced
  • 1lb (450g) chicken breast – chopped into bitesized pieces
  • 1tsp onion powder
  • 1tsp garlic powder
  • 1 tsp dried oregano
  • 1tsp dried parsley
  • 1 head of broccoli – cut into bitesized broccoli florets
  • 15oz (400g) can of cream of chicken soup – you can swap this for cream of mushroom soup
  • 1 cup basmati rice
  • 2 cups chicken stock (chicken broth)
  • salt and pepper to taste
  • 1 cup sharp Cheddar cheese – shredded

How To Make Easy Chicken And Broccoli Casserole

You are going to LOVE how easy this cheesy chicken broccoli casserole is to make, after a few minutes hands-on prep, it just takes care of itself in the oven.

Step One – preheat the oven

Step Two – fry the onions and chicken

  • Add the olive oil to a skillet pan and fry the onions for a few minutes.
  • Add in the chicken and fry until it’s turning white.

Step Three – add all the other chicken and broccoli casserole ingredients (except the cheese)

  • Sprinkle in the seasonings, then add in the broccoli, chicken soup and rice.
  • Mix everything together well.
  • Pour in the chicken stock, season with salt and black pepper – give everything another good mix.

Step Four – bake the chicken and broccoli rice casserole

  • Bake in the preheated oven for 20 minutes.

Step Five – add the cheese to the chicken casserole

  • After 20 minutes of cooking remove the casserole from the oven, stir, and then top with shredded cheese and put back in the oven for a further 20 minutes.

Step Six – serve

  • Serve the chicken and broccoli casserole straight away with your favourite side dishes. I tend to scatter over some fresh chopped parsley before serving.

How can you add extra flavor to casserole?

If you want to add extra flavor to the casserole, ramp up the herbs and seasonings, add in an extra teaspoonful of each.

You could also add a crispy topping to the broccoli Cheddar chicken casserole made from either bread crumbs or crushed up Ritz crackers
