Ingredients For Bacon And Chicken Ranch Salad

- Iceberg Lettuce - I use this because I love the CRUNCH. But you can swap it for any salad leaves you like - spinach, arugula, romaine lettuce, baby leaf lettuce - any!
- Green Bell Pepper - the green pepper gives a tangy bitterness that works well with creamy ranch dressing
- English cucumber - you could also use baby cucumbers or dill pickles - or a mix of all three.
- Cherry Tomatoes - perfect for salads, juicy and sweet. Baby plum tomatoes are a good choice here too.
- Bunch Scallions - these add a nice onion'y taste but without being as overpowering as green onion or red onion.
- Seasoned Cooked Chicken Breasts - I season the chicken with garlic powder, Italian herbs, sea salt and black pepper, then air fryer until cooked through. Leave to rest for 5-10 minutes, then slice (this is my FAVORITE way to cook chicken breasts for salad)
- Bacon - streaky back bacon, cooked until crispy is the ONLY way I like to do my bacon.
- Ranch dressing - shop bought is fine, unless you feel like making your own homemade ranch dressing, then go-for-it!

How to Store Chicken Bacon Ranch Salad
Store this salad in the refrigerator for up to 24 hours. If you are making ahead, don't add the dressing until just before you serve.
How long bacon ranch chicken salad last?
With cooked chicken you should eat it within 24 hours of making. Any leftovers taste great in a soft flour wrap or lettuce wrap, or stirred through some cooked, cooled pasta as a salad.
Prep this salad in advance
Absolutely prep this salad in advance. It's a great meal prep salad. When doing so, make sure the cooked chicken and bacon are cooled before tossing into the salad, and add the dressing just before you serve to avoid it going soggy.
Add-Ins For Your Bacon Ranch Chicken Salad Recipe
You can add in croutons (make your own - just fry cubes of bread in olive oil seasoned with Italian seasoning and a pinch of salt).
You could also add in shredded Cheddar cheese, grilled halloumi, crumbled blue cheese, any extra salad veggies or scatter in some nuts. I also love this with avocado - but I add this just before I serve so it doesn't go brown.

Ingredients
- 1 Iceberg Lettuce - shredded
- 1 green bell pepper - sliced
- ½ English cucumber - sliced
- 8oz cherry tomatoes - sliced in halves
- bunch scallions (spring onions) - sliced
- 4 seasoned cooked chicken breasts - sliced into bitesize pieces
- 6 rashers of bacon - cooked and snipped into bitesize pieces
- ⅔ cup ranch dressing (or more or less to suit)
Instructions
- Take a large salad bowl and toss in the lettuce, peppers, cucumbers, tomatoes, spring onions, cooked chicken and bacon.
- Pour over the ranch dressing and toss everything together.
- Serve with your favourite side dishes.
Notes
We usually make this recipe with 4 chicken breasts - we season and air fry them, then leave them to cool before slicing. But you can absolutely make it with store bought rotisserie chicken if you're short on time or just prefer to! No judgement here!
Also - remember if you're prepping this ahead, skip the dressing until just before you serve so it doesn't go soggy.
